thanks to jenny R - I made her califlower tator salad and it is GOOD - just season it the way you do your reg stuff - steam the califlower just a little  - you want tender NOT mush

my way of making the mock mashed potatoe is to simmer  the coliflower in just enough chicken broth to cover it along with a couple of cloves of garlic (I make it for a large fam LOL)  till very tender - then drian most but NOT all the liquid off, add butter (or butter buds if you want) and lowfat sour cream and beat till creamy -taste and add salt and pepper to taste - very easy and while they are not real mashed potatoes they are great for eating with roast and gravy - now here is the rub with these they do NOT keep - you eat what you want of them at that time and either  toss the rest or use it for a base for a cream soup the next day

Thanks for posting this, Danni! I had some fresh cauliflower that I was going to make as "mashed" but did the "potato salad" thing instead with lowfat mayo. It was wonderful! Thanks for reminding us of all the things we can do with it!

This reminds me of the "old" TMB---where healthy recipes appropriate to WLS patients were shared!! Love it!!

I like to post wls friendly stuff and I adapt a lot of other recipes for differnt people - most of teh time things work well with subsitution - some  things are a flop - don't know if you remember but I was the one that made nsa funnel cakes - and made one topped with whipped cream, choc, nuts, bannas and I can't remember what else during a potluck at my house for the north texas group - we split a dinner plate size one about 6 or 7 waysLOL
