Think I can do eggplant parm in the crockpot if I bake the eggplant first (rather than fry) & then throw it in the crockpot with the sauce??  Would you cook it for a shorter amount of time?

Why bake it first?  Just cook it in the crockpot.  I would do 8 hours on low heat.

Thanks...you're right.  Why am I cooking it first when the crockpot will do all the work.  Thanks, George!!

You can do it both ways: I lightly fry mine first so the edges will be crispy, after that I layer it into the crock pot and cook it for 4-6 hours.
Just a warning; if you just bake it in the crock pot it sometimes will com out soggy.  If with my pot roast I pan sear and then put in the crock pot...
both suggestions are correct; it is just all in the way you prefer cooking it~

Ok well it's in...raw & layered.  Here's hoping for the best.  I really wanted to bread it but didn't because I figured that would make it soggy and I sure don't need those carbs...
