Inexpensive Roast Beef

If you're looking for a good source of inexpensive solid protein, look no further than Tom Thumb.  They have their ANGUS bottom round roast on sale for $1.49/lb through tomorrow.

Super easy recipe:

Heat your oven to 500 degrees (yes 500).  Make sure you preheat it for at least 15-20 minutes.

Put roast in an oblong metal pan and rub salt and pepper all over it.  Put it in the oven dry-no water

Place in the oven and cook for: 7 min/lb for medium, 6 min/lb for medium rare and 5 min/lb for rare.  Then turn the oven OFF and don't open the door for 2 hours.  This sears the outside and keeps the inside moist and juicy.  After 2 hours take it out and slice it very thinly for the best taste.  I eat mine plain or use leftovers for sandwiches with spicy brown mustard.  Also makes for good open faced roast beef sandwiches for the family if you pour gravy over it.

Bet you can guess what I'm having for dinner tonight...with corn on the cobb and fresh fruit salad, yummy!!

Great tip!!!  And I'll have to try that cooking method.  I usually coat in flour and brown it on top of the stove then cook for an hour at 400 then lower to 200 for 3 or 4 hours but I'm definitely trying your way. 

I'm amazed at the meat prices I find at Tom Thumb at times.  Sometimes I walk in there and it feels like Christmas as long as I don't look at the price of anything else while I'm in there.

STEPHANIE-what if you wanted it a little more "done" than medium? Would it get too tough? I don't like meat to even have any "pink" in it-just grosses me out. Richard says I should just eat beef jerky-or my shoes

If you slice it thin enough it would be OK.  But you could also cook it in the crock pot until tender too.

You're welcome Danni.  Mine last night was awesome.  I had the butcher leave a little fat on mine so it made a really great gravy too.  I could only buy 2 cuz I have 4 briskets and a ton of other stuff in my freezer so I have no space left.

I am so bad LOL got 7 only 5 will fit in the feezer so I am crock potting one as pot roast and making the other as  roast beef following your directions - never done it that way befor but looking forward to it
