Recipes

Hey Guys,

I have some wonderful friends who are wanting to prepare a few meals for my family, but know that my choices are different from theirs.  They ask if I would give them a recip that I could eat so they could fix it for me.  Since I was put on solids September 12 I really haven't eaten much solid food so I'm asking for help.

I'm 3 1/2 months out from my bypass surgery.  What are some of your favorite recipes that would fit someone at my stage.  Something fairly easy.  I don't want to overwhelm them with a lot of ingredients.  I'm thinking mainly about a main dish (more protein in them).  Then I must admit for the first tiime since my surgery I'm being to be hungry for something sweet.  Scott, I see a lot of  desert recipes on your blog but don't know it they are for me yet.  My sister is coming to stay with me the second week in November and we are going to cook several dishes to freeze so I will have them for later.  Please don't think I'm become helpless, it's just hard for me to think about cooking for only me now, plus there are so many things I have to do to close out Jim's affairs.  Sometimes I think I'm going to drown in paperwork.  But don't work Scott, I am remembering to BREATHE!!!

I will be at the Baptist Support group on Tuesday night but will miss the lunch bunch as once again I have to be out of town for a meeting.

Love to all of you,

B

Barbara, have you tried the recipe section of Bariatric eating?  They have some wonderfully healthy and filling recipes there.  Give them a try, I think you will be very satisfied!

Thanks.  I have been to that site before but when I told Paula I had tried one of them she said that was for people further out in their recovery, so I don't want to make that mistake again.  I will go back there and to your blog and just try to make healthy choices.

I've tried a few recipes from beforeandafterhelp.com and have been fine.  I'm about 3 months out.

The recipes that I have tried are the following:

Cheeseburger Pie (YUMMY!)
Meatball Stew
Taco Soup
Falafles with the Tszeki sauce (sp?) (did not care for these, but the sauce is awsome with some grilled or baked chicken)

I also make my cousins Chili and I love it.

All the soups and stews, I make a pot and freeze it in 1 cup Ziplock containers.  Take one out the night before and take it for lunch.

I hope that this helps.

Chili was a good idea. Also, something like chicken and dumplins. Boiling the chicken and using low fat cream of chicken soup (or celery) and veggies. Somthing simple and soft and can even be done using a crock-pot. What about a turkey meatloaf?? Lots of protein.
In my opinion, I would stay away from desserts at your stage. It is just to early to start that habit. If you need something sweet, stick with jello, pudding or fudge pops and posicles. Ricotta swirl is good for breakfast but I also use it for deserts. Take some Ricotta cheese and mix in some SF preserves (like strawberry). Very good and works on that sweet tooth and is not bad for you.

Great ideas.  I'm going to use them all.  I think the chicken and dumplings and chili sound the best with this new cold weather that has moved in.

First off....Baboo..thinking of you dear...hope youre doing well...

I hvae no recipes tho...I need some myslef for preop lol. As for these chicken and dumplins what would you use instead of regular flour for the dumplings? Can you use the Atkins flour ya think? Ive been craving chicken and dumplings SO bad lately lol. And I could also use a good bean-less chili recipe too.

tina,
i made chicken and dumplings using cut up strips of low carb tortillas as the dumplings-tossed them in a little almond flour first and dumped them in the pot anf left the lid on.  they puffed up, not as big as a dumpling, but really nice anf they were great.

baboo,
you are in my thoughts and prayers.
