# 3 Recipe, Leeks, Walnts, & Goat chees Pasta

Leeks, Walnuts, and Goat Cheese Pasta

Fun Factoid: The female dairy goat is a doe; the male, a buck; the young, kids; and a castrated male, a wether.

Serves 4

Ingredients:
1 lb. penne
1 tablespoon butter
3 cloves garlic, chopped
2 large leeks, chopped
White wine, two splashes
3 oz. goat cheese
1/3 cup walnuts, shelled chopped into pieces
Parsley leaves

Instructions:
  1. Place penne is large pot of boiling salted water and cook. (I know you know how to make pasta!)
  2. In a large saucepan, melt the butter.
  3. Add garlic and leeks, sauté for 4 to 5 minutes.
  4. Splash in the white wine.
  5. Coo****il the wine has reduced.
  6. Add to cooked, drained pasta.
  7. Crumble in goat cheese and the walnuts.
  8. Give it a good stir and garnish with parsley (if you like).

I emailed the author of the recipes regarding grams, carbs, sugars.  But she says she would have to submit at least 35 to get the breakdown as it is very costly.  She has put out several books of weigh loss and inspirational motivation.  Here is her name:  Janice Taylor.  I will copy her email and post it for anyone who is interested.  (just discovered my apostrophe  does not work anymore.)  I can not wait until payday to try some of these recipes.  They all look simple and tasty.

Hi Sheila, I too have to watch my pasta and it's been almost 3 years for me.  I love my spaghetti sauce, but I have a hard time eating regular spaghetti noodles.  I was in the Dollar General and bought the mexican ones, they are really small and I am able to eat them without choking on them.  My daughter-n-love is mexican and she uses them for my little grandson as  he took can't handle the long ones.  As for mac-n-cheese, as much as I love that, a box is just too much for just me, so I buy the little ones and even that is two meals for me.  I like to take mac-n-cheese and add mild salsa to it.  Yummy, sometimes I'll add a little cooked chicken to it and make like a goulash dinner.

Hi There Kathy and TN Peeps,   Unfortunately, sending recipes to food labs are having nutritional labels made are costly!   I need to send quite a number at a time.
