Question on canning???????????????
Want to do some canning this year can anyone tell me if you can use a glass/ceramic top stove for this I just read somewhere I can't. And do I have to use a pressure cooker for all summer squash(yellow butter squash so on) I have the water bath canner.
I just don't want to put the money out on a pressure cooker at this time.

We have a Whirlpool glass top /smooth top stove . The instructions say you must use a smooth bottomed pressure canner and I have found that at Wakmart the only kind they have is made by PRESTO and it was around $95 dollars.
If you want to "can" yellow squash or zucchini the Ball book has a few recipes in it if you are wanting pickled squash.
Also since you have a glass/smooth top stove those blue water bath canner are not recommend either as they are not smooth bottomed, they can damage and crack your stove top and the warranty will be voided. I bought a big 18 quart stainless steel pot at Walmart for about 30 and you can use that to Boiling water bath in but you must stil use a rack in it, so the canning jars do not sit on the bottom of the pot.
Walmart sells canning racks separately, try one in the store to fit a pot that you may find there.
Oh cheap canning jars and lids are found at FREDS if you have that store near you. Or a BIG Lots . It is the golden harvest brand no need to buy the Ball brand or the Kerr brand.
Any other ? just feel free to ask I have been canning many years, things are always changing with canning, I learn new things all the time and low to share what I learn.

Yellow Butternut squash, that must be pressure canned.
Butternut squash keeps very well in a cook dark place, so why not try that instead of canning it?

For crookneck, zucchini and pattypan squash. Wash and trim ends, don't peel. Cut into uniform 1/2-inch thick slices. To pack hot put into a pan, add water to just cover, and bring to boiling. Pack hot into jars, filling loosely up to jar shoulders. Add 1/2 teaspoon salt to pints, 1 teaspoon to quarts. Cover squash with boiling cooking liquid, leaving 1/2-inch headspace. Wipe rim and seal quickly. Processing time in a pressure canner for pints 25 minutes at 10 pounds pressure, 30 minutes for quarts. |

Hello Sue. I have been canning for 45 years and things have really changed over the years. I canned 9 pints of pickled beets Sat in the my blue water bath canner and it didn't crack my stove top but I will use my pressure canner next time as a water bath canner because it has a smooth bottom. I did the beets with splenda instead of sugar. I had some juice left so I made some pickled eggs. I eat the whites and H eatrs the yokes. Heres whising you a good garden year.
