Okay, it's official!
I'm a bandster and my band HATES tuna. It sits like a freakin' golf ball right in the middle of my chest. I've tried adding some Helman's Light to it to give it some moisture and it still just sits there. Now, canned salmon I have not one tiny issue with. How nuts is that?
Chicken salad sounds yummy...how do you make it?

I just finished some chicken salad and it was very yummy, if I do say so myself.
I have found that chicken thighs work best for me as they stay moister than white meat. I remove the skin and as much of the fat as I can from a large pack of thighs and put them in the crock pot with seasoned salt & cover with water. When the thighs are done I keep the broth and remove the fat from it after it cools. It's great to use in other dishes or for making soup. I can then use the thigh meat in a variety of ways because I've only seasoned it with the salt.
For the chicken salad I put 1 - 2 oz of meat in the Magic Bullet and pulse until it's chopped but not pureed. I then add some Miracle Whip Light (or you could use lite Hellman's if you prefer) and a little bit of pickle relish. I've been afraid to use sweet relish so I'm using dill relish.
I've made chicken burritos for my husband and I using this meat and canned enchilada sauce to season it. Of course I don't use a tortilla but with some FF refried beans and cheese...man, it's good!
I've tried fresh grilled salmon and done fine with it. I haven't tried canned salmon yet. The tuna sat like a golf ball in the middle of my chest too. I was glad to get rid of it.
Hi, I've only had tuna twice since my surgery in January. Chicken, shrimp, no problem, tuna comes right back up. I'll stick to chicken and shrimp. I'll be 5 months out on June 9, and in July I am told I can start eating what I want like breads, beef, and pork. I don't miss them, so I see no reason to buy them. I drive to Knoxville for ground chicken that tastes just like hamburger without the extra fat. Turkey bacon and sausage work for me, so does chicken hot dogs. Shrimp, now I can eat that every day and have no problems. I even buy chicken egg rolls, now that is a meal with just one. Full of protein. I buy them frozen, and cook up just one, between the cabbage and chicken, I am getting in my nutrients with just one egg roll. But you can best believe when I go to a Chinese restruant, my plate will have one egg roll, and shrimp on it. LOL,
Well, I am about to jump into bed. I didn't get any sleep last night with that sleep study, so I am thinking about crawling into bed, read a while then go to sleep. Y'all have a nice evening or week. Love ya, Kathy

You have to watch that store ground chicken and turkey. When they grind it they put in skin and all.
I have a grinder attachment for my Kitchen Aid mixer so I grind my own chicken & turkey breast after I have trimmed as much fat as possible. I've been using ground chicken & turkey in place of ground beef for years. You're right, there is little difference in the taste in most dishes.
I've tried Chinese food twice since surgery and it didn't sit well either time. The egg flower soup was great but the chicken & few vegetables didn't agree with me at all. This was from a restaurant I used to eat at all the time pre-op. I love...or used to love...Chinese food. After getting sick on it twice, I haven't had much desire to try it again.
