Chilled Summer Soups- PUREED!

As requested, I am sharing a couple of the chilled summer soup recipes I found. You can add the tasteless whey protein, or your non-fat dry milk to add protein. I hope you enjoy them as much as I did! I have several more, so I will add to this thread as I come across them in my meal planning. Christine Strawberry Soup 2 Pints Fresh ripe strawberries 2 cups plain low-fat yogurt (I actually used Vanilla) 1/2 cup unsweetened Apple Juice* 1/2 cup Splenda 1/2 cup water Quarter the hulled strawberries, put all ingredients in the blender and blend until smooth. Chill several hours or overnight. *The recipe did call for orange juice, but I substituted it with apple. I strained this, since there were a lot of little seeds, but in hindsight it may have been easier to just scrape them off before I cut the strawberries. I put it in the freezer for about ten minutes. My kids thought it tasted just like strawberry sherbert. Chilled Cucumber Soup 1 large cucumber, peeled 2 cups chicken stock 1 1/2 cup skim milk 1 tblsp lemon juice 1/2 tsp onion powder 1/2 tsp garlic powder 1/2 tsp celery salt salt and pepper to taste snipped chives as garnish Dice cucumbers, put all ingredients in the blender and blend until smooth. Chill several hours or overnight. With this recipe, you can really vary the spices to your own preferences, as long as they are in a small-flake or powdered form (rosemary leaves may be a bit hard on the pouch). I also added a small splash of fat-free italian dressing to mine.
