I SAW THESE COTTAGE CHEESE IDEAS AND THOUGHT SOME OF YOU MIGHT BE INTERESTED. I HAVEN'T TRIED THEM BUT SOME OF THEM SOUND REALLY DELICIOUS !

~~~Cottage Cheese Variations~~~
--puree shrimp and cottage cheese
--put pureed baked beans on top
--add applesauce
--add your favorite vegetable and puree
~~~~Cottage Cheese Ideas~~~~
If you love chili and are want to give it an extra "protein boost" try adding about 1/4 to 1/2 cup of FF cottage cheese, and some shredded cheddar cheese.....it's good for up to an additional 15-20g of protein and sooooo good! Makes the chili nice and creamy and MUCH healthier for you than sour cream . I like to add the FF cottage cheese, shredded cheddar cheese, chopped onions, and some hot habenero or cholula hot sauce.....YUMMY!!
Oooooh...That sounds sooo good!! I know I would like that because I add cottage cheese to meat sauce for spaghetti squash. Thanks for the great idea!!!
~~~~COTTAGE CHEESE SCRAMBLE~~~~
4 eggs
4 tbsp cottage cheese, drained
sea salt and black pepper
1 tsp butter (or cooking spray)
Whisk together the eggs, cottage cheese, and seasoning in a bow. Heat a non stick skillet over a low heat and add the butter. (or cooking spray) Pour in the eggs. Coo****il the underside is just set, and then stir gently until the whole mixture is just set. Serve immediately.
This can also be cooked in a microwave: Place the egg mixture in a microwave safe bowl and add the butter. Cook on high power for 1 minute, and then stir. Cook for a further 1-2 minutes, stopping and stirring with a clean fork every minute until cooked to your liking.

~~~~Cottage Cheese Pancakes~~~~
I added about a teaspoon of Splenda Granular to the mix, smeared it with peanut butter and syrup and.........wow! Not bad!
I made several batches and have dipped it in yogurt, spread sf jam and sprinkled a little powdered sugar, rolled up and ate. Was even thinking of making them without the vanilla and cinnamon and using savory spices and herbs instead - cook them thin and use like crepes as manicotti, etc.
~~~~COTTAGE CHEESE RECIPES~~~~
Protein Snack
1 tub of Fat Free cottage cheese
½ box of Sugar Free Jello gelatin raspberry powder
1 can of crushed or cubed pineapple
Mix together. Top each serving with one scoop of strawberry or regular cool whip.
(Note- if you used crushed pineapple, be sure to drain as much of the juices as possible by squeezing the pineapple)
~~~~Pistachio Pudding Desert~~~~
2 small pkgs of Sugar Free instant pistachio pudding
1-16oz can crushed pineapple (do not drain)
1-8oz Cool Whip Free
1-8oz small curd cottage cheese
Dissolve pudding in pineapple. Add cottage cheese and then fold in Cool Whip till well blended. Chill. I am sure you could add 12oz - 16 oz of Cottage Cheese to up the protein.
I make something similar but add the plain Kool-whip right into the cottage cheese mixture. Its also really good with cherry and lime Jello. Normally, I use the 24 oz carton and a whole (small) package of Jello.

16 oz carton ff cottage cheese
1 box sf Jello powder (any flavor)
8 oz Cool Whip
1 can crushed pineapple (drained)
1 can mandarin oranges (drained)
Mix cottage cheese and Jello powder. Add drained fruits. Fold in Cool Whip.
It is really good with orange Jello. Highlights the mandarin oranges.
I have made a version of this for years and years. I use the whole box of Jello, a drained can of mandarin oranges, and stir the cool whip right in. My daughter and her friends always called it Pink and Yucky, but they loved it.
~~COTTAGE CHEESE PANCAKES~~
2 tbsp soy flour
1 tsp sweetener
1/2 cup cottage cheese
2 eggs, beaten
1/2 tsp baking powder
generous pinch of sea salt
1 tsp sunflower oil
Beat together flour, sweetener, cottage cheese, eggs, baking powder, and salt until well mixed, making sure there are no lumps of flour. Heat a large non stick skillet over a medium heat and add the oil. Cook tablespoonfuls of the mixture in batches. When golden underneath, flip the pancakes over carefully-they remain slightly runnier on top than standard pancakes. Cook the second side, then remove to a plate and keep warm while you cook another batch. Top with your favorite SF topping.
