Hot and Spicy Chicken Salad (very good)
Hot and Spicy Chicken Salad
2 c. cooked diced or shredded chicken
1 tsp. ground cumin
1 1/2 c. ( 6 oz ) shredded mild cheddar cheese (low fat if you prefer)
1 tsp. chili powder
1 (8 oz) pkg. cream cheese, softened (low fat if you prefer)
4 large or 6 medium hard rolls ( I use lettuce leafs )
1 (4 oz) can green chopped chilies
1 ripe tomato, sliced
3 tbsp. chopped green onion
1 ripe avocado, sliced (optional)
2 tbsp. minced cilantro (optional)
Preheat oven to 375. Mix together chicken, cheeses, chilies, onion, cumi, chili powder, and red pepper. (if using rolls) Cut small slice off top of each roll. Hollow out. Fill rolls with mixture. Put on cookie sheet. Bake until puffed and golden, 5 to 7 minutes. Garnish with tomato and avocado. Sprinkle tops with cilantro. Salad may also be served cold and on lettuce leafs instead of rolls... Both ways are very delish...
