What's on your Monday Menu?

Good Morning Everyone! What a fantastic weekend. We had a great time on Saturday with broom class, and ... (wait for it)... I had my first lobster roll of the season! It finally feels like summer has arrived! I also had a really nice time teaching my cookie class yesterday. My students were great, as usual!
This morning we are heading out to help my mom get some free furniture from her friend. Grim is lending his truck and muscles and I am only going because my mom's friend has a goat farm, so there will be goat petting involved :) Then, omg, I really really really need to write some papers.
QOTD: What refuels your tank when you are feeling low? I love teaching because it gives me such a boost to be with people doing something I love :)
Accountability: Well Saturday was waaaaay off. I had 500+ calories before 9am, and it went downhill from there. But - please take note. At 3:24pm on Saturday July 29th, Grim and I walked in and out of a Fudge shop without buying anything.

Good morning QJB and menuers!
Yep, that sounds like a perfect weekend, including the lobster roll. Much respect for resisting the sugar. Shops like that are like walking into a suspended sugar cloud. It feels like you ate some just by breathing. Glad your class went well! Love the shark head...and it's probably more attainable than some of today's standards!
QOTD- This is where I showcase the introvert. For me it's nature. I need to be in the green with trees and fresh air. Rivers and mountains are huge bonuses. Rustic tent camping, though I'm too old for sleeping on the ground these days.
Office day today, so got to get on it.
Accountability - I made these ketoish homemade English muffins with baked egg and cheese in tiny pans instead of the turkey thing. I also had more peanut butter.
Exercise- Just office today.
Menu - part of a banana, a piece of spanakopita, chorizo meatloaf with queso sauce, chorizo peppers, leftover pork chop, blueberries, seaweed, the turkey and cheese English muffin on the way to work.
Cheers!

Gurrrl, that English muffin looks choice. It looks delicious and a fine addition to any restaurants brunch menu. What do you charge for that? $17? $23? It would get 86'd quick.

Haha, thanks Matt! Charging bistro brunch prices would recoup my cooking spending pretty quick. Hmm...that's an idea. It was good though, and I'll definitely make a variation of it again. Love some runny yolk.

Yuck, no runny yolk. I will only eat scrambled eggs. Of course, quiche also.

Share your wisdom! I was super happy just to have some delicious runny yolk in this attempt. It was also in my toaster oven. Trial and error. Is it distance from the element? Time? Temperature? Convection? :)

Quiche is kind of a giant, tasty scrambled egg. Love quiche, too. I grew up with runny yolks though. Given all my weird food stuff, interesting that one stuck.
