Amy, whenever you are feeling up to it and feeling better, check out the Imrie Rhino and Wildlife Sanctuary walk on ifit -- it was so good....the walk is fine, not super hard although I did get sweaty, but the video walk was incredible. Like I might have to jus****ch it again to see it again.

Mornin' All!
Sweden and Denmark were beyond fantastic. I'm ready to pack up and move there - too bad their immigration rules are pretty strict. I'd have to divorce my husband and marry a Scandinavian to be able to live there (or get a job there - but at my age, not happening...). But maybe when DH retires, and we no longer have cats and the "moms" are either no longer with us or in assisted living, we could go there for extended vacations - like a month or more. Loved, loved, loved it. Probably the best trip ever! So fun to meet my "new" cousins, too (2nd and 3rd cousins, that is - the 1st cousins all live here in the US)
anyway, back to it. I ate WAY too much while I was there and refuse to step on the scale until next week - although most days I walked 20K + steps - and occasionally 30K + steps, so maybe the number on the scale won't be as bad as I'm thinking. Maybe it'll just be a lb or two (or maybe none if I wait until next week...)
QOTD: I like homemade Indian dals, gumbo, asparagus soup. And chili - does that count?
B: plain yogurt with a tablespoon of lingonberry jam, coffee with half & half
MS: protein shake
L: maybe more yogurt (trying to keep calories really low for the next few days)
MS: 6 black bean chips dipped in hummus
D: maybe half a fake burger with some salad? (not sure yet)
have a great day, everyone!

Welcome back! Sounds like you had a great, recharging trip. Look forward to some pictures.
Dal! I'm just dipping my toe in there after finding a great split pea, spinach, and coconut dal that I want to try and replicate. Maybe someday!

I walked so much that I likely burned most or all of the excess off. It's happened many times before! And that Danish rye bread - good Lord. I had a piece of it every morning at breakfast. I was able to punt the Miralax halfway through the trip - and am STILL feeling the effects of that bread! I suppose it'll be back to Miralax in another day or two - unless I can find some of that Danish rye bread (rugbrod) somewhere around here (I've seen recipes for it - but I'd have to buy way too many ingredients - plus it seems a bit complicated to boot)
When I was growing up, there were times when my father was on strike for long periods and money would be very tight. My mother would make soups to use up vegetables from the garden. We called one soup "strike soup". It was made with stew beef and lots of tomatoes and other vegetables. It is still my favorite soup.
