Mornin' Weekenders!
this weekend should be beautiful weather-wise. We're going to go biking a little later this morning, probably to our favorite coffee place in the next town over, and then I have my cookbook group meeting at 1:30. I made a sweet potato loaf (with dried cranberries and pecans) for it. I had more than enough sweet potatoes to make two recipes, so I made muffins for us after I finished making the loaf. To bring the calories way down, and increase the fiber and protein, I was going to do my usual: replace half the flour with crushed bran flakes, use artificial sweetener instead of sugar, use unsweetened applesauce instead of whatever fat they use (sometimes I'll use plain yogurt for that), and add a couple of scoops of protein powder. Oh - and in this case, I also used fresh (well, frozen) cranberries instead of dried, and left out the pecans. The only problem was I was looking at the recipe while I was throwing everything together, and evidently wasn't concentrating while I was doing it, so I ended up putting in regular sugar instead of the fake stuff. Crap. I'll still eat them, but it might be a little tougher to work them into my daily calorie allotment, since real sugar does add a lot of calories (in addition to other things). So I'll save these for lighter days. Wish I would have been paying attention!
QOTD: I don't keep up with modern music at all (and by "modern", I mean anything written within the last 40 years or so - disco pretty much killed popular music listening for me). I'm familiar with some of the songs because of Zumba and water aerobics, but not enough to rate them one way or the other. I'll circle back if something comes to mind re: artists from awhile ago (i.e. artists that I'm much more familiar with).
B: plain skyr with strawberry/rhubarb compote, coffee with half & half
MS: protein shake - and probably more coffee (or an iced latte with SF syrup) at the coffee place
L: not sure what all will be at the cookbook group meeting, other than most of the recipes in the book we'll be discussing (and cooked from) are pretty carby (and caloric!). Of the dishes I know will be there, there's my sweet potato loaf, groundnut stew, mac & cheese, and bread pudding. I guess this means I won't be eating again for at least the next week...
D: something light (after that lunch!!). Maybe a chicken skewer or two and some vegetables
have a great day, everyone!
