I've been absent lately since my schedule is changing. I'm not posting first thing in the morning and it's easy to lose track of the day.

Today is Friday.., thankfully.
I need to stop by Costco after work and I already dread it. Ugh. Or not. I may swing by Aldi instead. We'll see. Costco on Friday before Memorial weekend? ugh...But some one need to make the crowd, no?

L: chicken in coconut sauce... I actually ate more than I thought I would... tasty.
D: not sure... I have a pork in lime-cilantro sauce, or I'll get something simple. maybe Cesar with meat...
S: meat sticks, cheese... (either way - I would need to eat something before I visit Costco or Aldi.)

That is a sweet and yummy looking burger and fries! Have fun in DC.
Last night was the ravioli cooking class. It was lots of fun, we made a variety of raviolis from butternut squash, brisket with ricotta (plus or minus spinach added), shrimp, or any other variation with the above ingredients. We got a recipe for a super easy egg pasta that can be used for ravioli or other pasta noodles. We had lots of leftover ravioli to take home. DD wants to do another cooking class. I have looked and there are a variety from Greek, Indian, Thai, Lebanese, etc. I will have a hard time choosing but I guess I can spread it out some over the year. The pictures are from making the raviolis and DD's 17th bday this last week.
Weekend plans: No yoga classes tomorrow so DD and I will take a 2-3 mile walk in a nearby natural area, we have a nail appointment to follow, then we will go to the movie (we missed her movie choice for her birthday due to a parade making it impossible to make the movie start time). Sunday, I will get in a workout (yoga). Sometime this weekend will probably go to the Big Red Barn to pet some animals (cows, goats, the world's largest rodent, chickens, and other cute creatures). You can buy cups of produce to feed the animals too. It is usually pretty fun. A massage Sunday afternoon. Other than that, maybe some house preparation since we will have guests for DS high school graduation. We need some deep cleaning done and some more yard work. Wishing everyone a great long weekend!

Thanks, they were actually a little large. Some of the other cooks made really nice smaller ones. Better pasta to stuffing ratio than mine but not a bad first effort for me. I would definitely try to make again.

Aww, babies are growing up! Happy late b-day to DD and graduation to DS!
I'm low-key envious of the cooking class. Looks amazing! It was something I'd hoped to do when I was in New Orleans last. Sadly, my friend hates cooking so I didn't want to drag her through it.
