Mornin' All! The only thing I have today is my last Russia/Ukraine conflict class at 4:00, and the only thing we're doing in it is the students' group presentations, so I may or may not go - I'll see what I'm feeling like at that point. If I go, I'll bike over there. I'm also going to Aqua Zumba this morning, so that's a terrific amount of exercise in one day (that is, if I do both - I'll probably bike this afternoon regardless since it'll be sunny and warm - rain returns tomorrow for a few more days - ugh. April this year seemed more like March, and May so far is seeming more like April...)

someone mentioned the coronation quiche. I'm going to make that for Saturday, since I've had a pie crust in my freezer for weeks (I'm sure their homemade crust is much better, but then, I'd be stuck with this stupid store-bought crust even longer - I want to get rid of the thing!). The beans in that quiche sound pretty weird, but I'm going to make it regardless (or I could just substitute the beans for something more common and just pretend it's the King Charles version...the bean thing does sound pretty bizarre...)

QOTD: well, my oldest cat is super friendly - and VERY clingy. Especially overnight, when half the time he's trying to sleep on my face (and I have to gently nudge him off because it's hard to breathe!). But besides him - hmmm....maybe baby goats? Cows can be really friendly, too.

B: plain skyr with cranberry/cherry compote, coffee with half & half

MS: protein shake

L: chocolate "mousse" with raspberries

AS: raw veggies with herb/onion dip or pita crackers with Indian-spiced chickpea dip

D: kale salad with some kind of protein (maybe one of those little half-pita stuffed with egg and cheese (from Aldi) - something else that's been in my freezer forever...)

It sounds like a lot of "alternative" recipes are being proposed for that quiche, lol

I think I'll use the one in the Washington Post, which the food journalist/recipe developer said is a lot less soggy (she reduced the amount of cream and milk - and added an additional egg because she said it'd need that to set it up better - plus who makes quiches with only two eggs?). She also use frozen shelled edamame instead of broad (fava) beans - but I'm going to try to find fava beans - I know I've seen dry ones - but maybe they have canned ones so I won't have to bother cooking them...

well, scratch Aqua Zumba. There's a big truck parked in our driveway (the arborists who took our dying blue spruce down yesterday). At least they're back - we were afraid their idea of a "stump" was the approximately 8 foot tall bare trunk they left yesterday after they were done cutting down all the branches and the top part of said trunk. We were wondering what the heck we were supposed to do with that. But they were back this morning to take the remaining, branch-less trunk down. Good. So anyway, I guess I'll just be biking today. I'll take an extra long ride, since I was planning on about two hours of exercise today (an hour at Aqua Zumba this morning, and an hour on my bike this afternoon..)
