Hello Hello and welcome to a new week! I am ready for a fresh start. I have been in a bad mood for most of the weekend. Saturday I was insanely frustrated by customers changing their minds and leaving me screwed. I finally perked up on Sunday afternoon because I had a great class! Everyone was so nice and fun, and they all clapped at the end which is so funny, but it's a nice mood lifter :) But then I came home and found that one of those lovely people left me a bad review! So I went right back to sulking. Whomp whomp. I need to turn the frown upside down today.

I am planning to make lots of dough to freeze today. Since we'll be away from May 1st - 6th I feel like I need to do a lot of prep to be able to manage the busy week when we get back because I have two classes and a few orders at the end of that week.

QOTD1: If you were a doomsday prepper, what shelf-stable food would you hoard?Well, I guess I am not too worried about my waistline so let's start with a lot of cookies. But then I guess I will get to that canned food, haha. I weirdly like canned chicken because it goes down easily and I think it tastes much better than tuna, so I will go that that.

QOTD2: Does anyone have good recommendations for a mystery series on Audible? Grim and I have about 48 hours of driving ahead of us in the month of May for a few trips we'll be taking, so we thought it would be fun to get into a series we can enjoy together! We'd love to hear your favorites!

Costco members, I have exciting news! The changed their Egg Bites from a generic brand to Starbucks! They are the exact Bacon & Gruyere ones from the store but they are sooo much cheaper. Very deli****'s also nice because I can make just one, because 2 was always more than I needed.

Good morning and happy Monday! I hope everyone is ready for the new week!

I had a pretty good weekend, topped by my hairdresser (when we were talking about coloring my gray/not coloring my gray) telling me, "if you said you were 40, you could get away with it" so that made me happy...of course, I promptly proved that I am in fact 50 by rolling over in bed and tweaking my back, lol. So my exercise today will just be some stretching.

My Korean fire meatball experiment came out ok, but that's disappointing because the Korean fire chicken is AMAZING so ok is actually not a win -- and while I packaged them up for leftovers, I know I won't end up eating them.

QOTD - well, I guess I'd just keep my tea horde going because I don't eat much out of cans.

QOTD 2 - no recommendations, I don't usually listen to fiction audiobooks, the last one I did was the audio performance of the Sandman (Vol 1, 2, 3). It is really good and there is a bit of mystery but mostly I just love the hours of James McAvoy's voice, lol.

I've always been intrigued by Korean Fire chicken. There's a little karaoke bar here, Dancen, that's supposed to make a spot-on version. How would you improve the Korean meatballs next time?

Of course! It's so easy and so good. I found a gochujang at Whole Foods called Mama's that has regular, extra spicy and spicy garlic options and so far they have all been good, but I've made it with the red and white gochujang from the Asian aisle at king sooopers/Kroger and it was delish also.

1-2 pounds chicken (I do breast tenderloins but the recipe calls for thighs). 1/2 cup gochujang, 1/4 cup soy sauce, 1/4 rice wine vinegar, 2 tablespoons sesame oil.

Whisk everything except the chicken together in an oven proof skillet.

When mixed add the chicken, turning to coat. Let marinate 20 minutes. Put under hot broiler, about 6 inches from element, for 25-30 minutes stirring once.

It's so good, gets a little bit of char on it and it's just the right amount of spice. And super easy to make after a long annoying day at work!

Sorry about your bloody customers! How annoying.


Tuesday is our most revered and respected national public holiday (ANZAC Day) it commemorates every Australian and New Zealander who died during wars. Started as a commemoration of a famous battle in WW1 and then evolved. A lot of very serious Dawn services, veteran marches etc followed by big professional sports games and too much drinking and a normally illegal gambling game called 'two up' that police allow for the day at pubs lol in any case, whilst I have great respect for the day, I won't be partaking in any activities! Looking forward to doing very little.

We also observe remembrance day on 11/11 but it's not a public holiday.

QOTD: Chocolate, lollies and cans of spaghetti lol

Food: Protein shake, protein bar, collagen coffee, ham, boiled egg and 3 mini chicken s kebabs for lunch and a chicken and veggie ready made meal for dinner. Something else maybe we shall see!
