I did something similar once and made a "crust" with crushed hazelnuts and butter in ramekins and called it frozen cheesecake:-)

Sheila-great job on modifying your sweet options. Can anything be too peanut buttery? I would be interested in that recipe it sounds very good.

I'm not a PB fan, so anything with PB on it is a no go for me.
container of cottage cheese (small curd)
a little bit of honey (I used my substitute sugar)
two tbsp of PB
MIX it all with an immersion blender (don't over mix, this is just to smooth out the curds)
add some Lily's choc chips
Put in the freezer for a couple of hours (don't leave in the freezer for too long because when it gets too hard it's not good - you want it to have the texture of soft icecream)

Sorry about your hands. I have arthritis and nightshades vegetables (or even supplements) make that really difficult.
I used to sleep in compression gloves, but as long as I don't do cheat on my diet (darn potato fries) I'm often just fine.
Plus - Keith bough me an electric massager just for hands, plus I use red IR lamp that is absolutely wonderful for hands, wrists, knees and feet.
You may really try that... it can be a business expense...
My acupuncturist uses that and when I hurt my hip and got a huge hematoma, i bought it so I can have a fast recovery..

QOTD: I used to love hiking. Hiked a lot but my ex and my back, plus arthritis changed that. Now I love sightseeing, much more comfortable, in busses or by public transportations, or just walking all over new cities and areas. I do like to snorkel, but we having been anywhere lately that I can do it.
This year we planned a 3 week vacation to Europe, but because Keith got a new job, we need to cancel that and I hope we can just go for a week to Poland. Keith's new company closes for the week of July 4th, and if their IT department doesn't need to work, that would give us a week to fly to Warsaw and spend time there.
My cold is just annoying at this moment. My back and sciatica are bothering me, but since i didn't stretch in the last 2 weeks - no wonder.
Yesterday we went to see the movie - Quantomania - probably the most stupid movie I saw in teh last 3 years? I cant believe how expensive the tickets are. Matinee. O well..
My eats today:

S: chicken in primal buffalo sauce
D: probably will have Cesar salad with some meat or fish.
Exercise: stretching... I really need to do it...
