Mornin' All!

well the day I've been looking forward to has finally arrived! The Hindu wedding festivities start today at 11:00 am, to be continued Saturday evening. This should be super fun! I've been to a handful of Hindu ceremonies before (once here - and a few when I was in India), but never a wedding. Really looking forward to this! Nothing else on the docket for today, so this'll be a short post (for once!)

QOTD: I don't ever answer the phone if I don't recognize the number (or the name - I have a huge contact list). If it's legit, they'll leave a voice mail and I'll call them right back.

I don't know if or when we're eating today while at the wedding, so this will look kind of weird:

B: protein shake (swapping my usual morning snack and breakfast since I don't want to drink a lot of liquid before I go the ceremony - I'm hoping for maybe only one bathroom break while we're there!), coffee with half & half (already had)

MS: I may have a Kirkland protein bar since those contain 10 grams of fiber on top of the protein - should keep me satisfied for a while in case they don't feed us today - or feed us near the end of the ceremony (it's scheduled to go until 3:00 pm)

L: ?? I have no idea if, when, or what (hopefully Indian food - I'm looking as foward to that as I am to the wedding itself!)

D: probably a piece of spinach kugel or a salad

Are you looking for a corned beef brisket recipe or just a beef brisket recipe? I have a tasty corned beef brisket recipe that uses an instant pot.

This is how I've been making my corned beef for about 6 years now. It always comes out tender. I cook any vegetables like carrots, cabbage, and such separately.

Instant Pot Corned Beef Brisket Recipe

Ingredients

2-3 pound Corned Beef Brisket

1 medium Yellow Onion peeled and cut into wedges

3 Garlic Cloves peeled and chopped

1 ½ cups (12 fluid ounces) Dark Ale (Guinness)

1 Seasoning Packet that comes with the corned beef

6 qt Instant Pot or bigger

Cooking the Corned Beef Brisket

Insert the rack into the Instant Pot.

Add the onion and garlic to the Instant Pot distributing it evenly on the bottom and on the rack.

Remove the Corned Beef Brisket from the package, reserve the spice packet and rinse the meat thoroughly.

Place the brisket in the Instant Pot on the lift-out rack (if there is a fattier side put that facing down) on top of the onions and garlic. Pour the beer over and around the corned beef then sprinkle the seasonings evenly on top of the brisket and around it in the pot.

Add the lid to the Instant Pot, select MANUAL High Pressure (default pressure setting) and 120 minutes.

When done, do a QUICK RELEASE of the pressure, remove the brisket, brush the seasoning from the top of the brisket (more difficult to remove when it has cooled), place it on a cooking sheet fat side up and put under broiler to crisp fat if that is how you like it. Or just let it rest on a platter.

I picked up a ham each for me and the cat, and a brisket. I'll give this recipe a try, leaving out the garlic and onions, of course. It's quick and easy.

Does the size of the brisket effect cooking time in the Insta Pot?

If the its on the smaller side like 2lbs I would do 90 minutes instead of the 120. My corned beef is usually 4+pounds and comes out nice and tender at the 120mins.

I take it you're not a fan of garlic and onions. Those two things are a staple in my house. I grow both every year and have fresh, dehydrated, freeze dried, and powdered. Some people think I'm crazy when I say I have almost 300 garlic plants coming up.

Why would you have multiple versions of something as yucky as onions?
