What's on your Saturday menu?

Good Saturday morning everyone. I am up VERY early so I thought I'd go ahead and get us started. For a lot of us this will be a long weekend due to Presidents' Day Monday.

Not a lot going on today and I hope it stays that way! To say I have low energy would mean I had some...I have none! We went to Sam's yesterday and it when wiped me out. If we do indeed stay home I'll probably chainmaille.

QOTD: What is one kind of food item or recipe that everyone seems to but you either secretly hate or just hate out right?

I'm tired of everything being spicy. I have a sensitivity to capsaicin and it bums me out. Also anything red velvet grosses me out. Allllll the dye in it.

B: duck egg, keto bread, two cookies(can we all say ugh) and coffee

L: premier protein pancake stack(found these at Sam's yesterday)

D: thinkin lemon pepper fish or popcorn shrimp and some veggie...most likely Brussels sprouts

S: SF pudding, pepitas and ????

I loved the Rocks in Sydney. Beautiful part of the city. Would be terrified to live there in the summer, though!

Good morning!

Today is a work day, have to be there at 7:00. My sister will be here for an overnight visit. That is all for the agenda today. I felt terrible yesterday, I have an autoimmune flair going on right now and it is getting the best of me. So much pain.

QOTD. Lamb Chops Other than my brother and sister nobody else will eat it. Melody I am with you on the Red Velvet! But I very much love spicy heat, even before it was seen on every menu

Menu Protein shake, orange, banana and chicken wrap. Pizza for dinner! Or Lamp chops. I bought those for the grill while my sister is here.

Good morning Mel and weekend menuers!

Yay for the slight improvement again in itchiness! Hope you get to stay home.

I don't have a three day weekend and often forget about when bank holidays are. In fact, my annual evaluation is Monday. Yay...

QOTD- Definitely dinner creamed casseroles. And vegetables made with a meat base. I lived in the south for a long time but my mother's cooking skills came from the north. Or somewhere casserole was not popular. It took me a long time to just be able to use "cream of anything " soup as an ingredient in recipes.

Today I'll drive to town again and test my tolerance on the roads since need to Monday, anyway. I've picked a few recipes to meal prep this week and am hoping for shepherds pie, turkey sausage balls, and some kind of not creamed casserole. All recipes adapted to be low carb, of course.

I also have a lamb leg steak to figure out. It was marked down and is on the list of things I've never tried to cook before. I love lamb though, so going to try!

Accountability- I made a small amount of sour cream dip yesterday and ate it with some raw carrots. Delicious but unplanned.

Exercise- More walking. Insurance nurse called to check in yesterday and reminded me blood clots can happen up to a couple of weeks after surgery. Good reminder.

Menu - Protein pudding, ratio yogurt, egg salad on a wasa cracker, lamb steak if I don't destroy it. Carrots, seaweed, and some other vegetable.

those "cream of anything soup" casseroles were the big thing in the mid-century, when I was a kid. They're definitely not the hip and trendy thing anymore, and haven't been for years, but people still make them - and you can also find them at little local cafes sometimes, too. The cookbook being featured at my next cookbook group covers Wisconsin cafes, many of which are in small towns and rural areas. It includes a recipe or two from each place it features. Lots of "cream of something" dishes in there - which I refuse to make. I'm not sure what I'll make from there. A couple of the recipes looked OK - like a macaroni salad and one of the pies. But a lot of them sounded like mid-century fare - and very unappealing, at least to me. Lots of casseroles (with cream soup), things with lots of ketchup (one recipes at like two cups of ketchup in it - GAG!), or dishes that had highly processed ingredients in them. Ugh. But again, there were a couple recipes that looked fine - I'll make one of those, if no one else claims them first.

You know, Wisconsin to me is dairyland and hearing that they live off cream casseroles and ketchup (also gag) is a bit sad. I did get some great cheese curds there but now know to skip some of the rural diners, which may or may not treat ketchup as a food group.

Hope you're able to reserve a decent recipe!

You could take one of the highly processed recipes and use more fresh ingredients. Show how to bring the mid century back to life in a new way!

I substitute low fat, low carb low calorie Greek yogurt (usually 90-100 calories per serving) for sour cream. If you use plain no real difference in taste to me and a lot less calories.
