What's on your Thursday Menu?

When I was approved for SSD I had to use a lawyer/medical group that specializes in it in my state, yes they got a big chunk of my back pay but I wouldn't of gotten it if they had not been up their you know what. Sadly the group I used moved away from SSD cases. I didn't care at the time for the back payment issue as I needed the medical stuff the most.
I'm sure y'all have a lawyer though. It is the single most maddening crap to have to deal with. If you do indeed have a lawyer maybe getting an additional lawyer would help to really be up in SS's business. The squeaky wheel gets the grease so to speak. I'm praying that this gets resolved for y'all and soon.

Good morning!
I've been up three hours. Roger and his snoring is going to be the death of me. And in just 40 days I am going to be in a little RV with him with no where else to sleep for 3 or 4 months. Probably should be my QoTD, but we know the answer. He already has a cpap but he hates it. I am going to inquire about the new Aspire machine and see what our insurance will cover for that. That will teach him. Wake me up 3 days in a row at 3 or 4 in the morning and I'll have someone cut a hole in his chest and stuff a machine in there. Wow, that sounded very violent. Sorry about that.
I was successful with food yesterday. Stuffed mostly, though I did have my normal OMG I am going to die of starvation in the late afternoon. That was fixed with 1 ounce turkey jerky and 1 oz pop corners. I walked over 3 miles and did 55 minutes of yoga. No wine.
Today I have done a 30 minute yoga video and still hope to get to the stairs. Weather is holding today, supposed to turn tomorrow. I've scrubbed all the kitchen counters and sink and I have a second pan of bacon in the oven. I need to make a couple of quiches along with prep some other foods for our weekend in the desert. I also need to finally make it to Target and Kohl's and go to the grocery store. I have some amazing "Bacon" avocados (it's a type) and one popped up ready overnight. These are huge, so I need a dinner plan to support the intake of avo. Life is hard.
Menu:
B: the last of the turkey/butternut squash skillet
L: a repeat of my orange/beet/pistachio/goat cheese salad from yesterday. SO GOOD AMY!!!
D: maybe chipolte shrimp and refried beans? I need to go research a chipolte recipe to see if I have most of the ingredients.
Peace Everybody!

Keep us updated on the Aspira. I hope it saves your sleeping habits. Ron and I had to separate into our own rooms due to my snoring. I won't wear the C-pap either. I do think it is milder since surgery but never actually had it checked since weight loss, if that option works for Rog I may look into it.

my husband's snoring is so awful - he sounds like a chainsaw. I kicked him out of the bedroom four or five years ago, but I can still hear him sometimes from the guest room - with both doors closed! UGH. But at least it's not in my ear anymore. It was impossible to sleep (and yes - I sent him for a sleep study - and no, he doesn't have sleep apnea. Double UGH. At least that would have been manageable with a CPAP!). It's really hard when we're on vacation, because I'd never pay for two rooms....so I've got to hear that all night. Next time we go somewhere, I'll pick up some ear plugs - or maybe those sound-cancelling headsets that people who work at airports use - those would work for sure! (although then I probably wouldn't be able to sleep because of the bulky headphones!)

The foam in the ear plugs work great. I wear them when I travel and when it's fireworks season.

you can get ear buds instead of the headphones. However, I am not sure how well they would stay in your ears while sleeping.

You are a workout machine! WTG. That salad sounds delicious, care to share the recipe?

Thanks Lana! I'm working hard at being dedicated to a routine.
No real recipe. I roasted fresh beets (clean and cut off tops and bottoms, rubbed with olive oil, baked at 375 for about an hour until they were fork tender. After they cooled a bit, I rubbed off the skins) and then peeled and diced a small orange (I find it better, juicer, to cut the rinds off squaring up the orange and then dice it), those go in a bowl with two ounces chopped up goat cheese, 1 tbsp roasted pistachios and a tiny bit of kosher salt over all. They I heated up 1 teaspoon of honey to thin it out and drizzled it over the whole thing. Yummy and filling!
