What's on your Wednesday Menu?
Good morning! Last work day of the year for me. And at midnight tonight, I officially move into the 90 day count down for retirement. Scared AND excited. Maybe I shall go buy some I bonds for a bit of retirement cushion...
I did very well on food last night. Not what I had planned, but still, leftovers and a reasonable amount. No liquid calories. I ate 3 chicken wings for lunch because we had a bit of a b-day party for one of our guys here at work. But I didn't eat anything else between lunch and dinner. So I felt like I did pretty well.
QoTD: Definitely Jayco. The RV we purchased last year has needed so many fixes. It's super common in the industry (like, how do they stay in business? Oh yeah, people like us think it's not going to happen to them). But dealing with Jayco and the repair shop is a torturous affair. And we just keep having to do it again and again. But we shall not give and we will persevere. Before the warranty runs out.

B: 3 oz turkey and 1/3 C cottage cheese
L: leftover turkey and a couple bites of stuffing
D: leftover ham, a bit of mashed potatoes and I really need to eat the salads in our fridge!!!!

I feel sorry for that poor tiger. I'm guessing he/she is obese because of overfeeding by humans. If so, they are endangering its health. Terrible...
I'm also so sorry to hear about your eyes, QJB. None of the people I know who've had LASIK have had those kinds of issues for more than a day or two after surgery. They need to deal with this problem - and it sounds like they won't. Lawsuit?
I stepped on the scale today for the first time in a week. Up a pound since last week - so at my top weight again. ARRRGGGH. Although given all the eating I did on Christmas day plus for a day or two after, i guess I should be relieved rather than aggravated. Still. I really need to cut way back on my eating. Lately I've been grateful for the days when I can stay at or under 1800 calories. Pathetic. I'm pretty active, so that many calories isn't way out of line or anything, but I sure is heck am not going to lose anything if I continue to stay at that level (and I absolutely CAN'T go any higher than that, or I'm going to gain). My planned menus are OK - it's the grazing I often do later in the day. I need to get out of the house then or find SOMETHING to do other than check out what's in the fridge...
QOTD: we're super frugal so nothing really comes to mind - other than food, we really don't buy much.
B: plain skyr with cranberry sauce. Coffee with half & half
MS: will skip since it's almost 10:00 and I haven't even eaten breakfast yet!
L: maybe a Jimmy Dean's or Realgood breakfast sandwich (those stick with me for a long time)
AS: protein muffin and maybe a L&F creme brulee (if I can get my butt dressed and out to the store today...)
D: butternut squash soup and a miso/chickpea sandwich made on Keto bread
I also have apples, pears, and oranges that I can eat if i need more snacks. Fewer calories and more fiber than some of the stuff I've been eating. But I'm going to try hard NOT to eat anything off my menu today!!!
ex: if the roads are OK, I may go to the gym branch across town for a Zumba class this evening. That class is SUPER intensive. It's hard, but I'm sure I burn up a TON of calories when I'm there!

Good morning ~ YES - totally relating to the tiger as well as your mirror moment, JB. My sister sent me a cute video of my great niece from Christmas day. My jaw dropped to the floor as I saw myself in the background for 2 whole very fat minutes. OMG. I didn't even recognize myself, especially since dying my hair a darker color. You are right, old is one thing but fat we can control and that is my plan. Simple, CAMAW as long as I can and exercise everyday, period. There is more to it but that is gist. No excuses, be a machine.
I have to hear about your air fryer egg bites, PLEASE!
Today is another chill day. It will be cold and raining all day. I'm having lunch with a co-worker but otherwise not much happening except work of course and fine tuning my health plan of action for 1/1/22.
QOTD - I can't get over the experience you've had w/Lasik - unreal. I can't think of anything personal, but work related? I could go on and on but I don't want to bore ya'll to death.

My air fryer egg bites tasted delicious but were a total disaster to make!
Recipe = 3 eggs, 3/4 C cottage cheese, 1 T hot sauce, 1/2 c shredded cheese & some crumbled bacon.
Here is the disaster part: My first problem was that the Tupperware I used to mix the eggs, hot sauce and cottage cheese literally had a HOLE in the bottom, so eggs were dripping out. Haha, okay so I transferred what was left into a real bowl and used my new hand mixer. I poured the mixture into the silicone cups and then realized that the mixer never incorporated the cottage cheese, so I had to spoon that in afterwards. Of course that made the cups overflow, so I had another dripping mess on my hands. I added the cheese and bacon, and it overflowed some more. Sigh. I put the whole thing in the air fryer for 12 minutes on 360. Of course the overflowed again, and the cheese that was sitting on the top and not fully incorporated was burnt.
They tasted great but I need to mix them up in the nutribullet next time, and not use the hand mixer again because that was a disaster. What a mess I made!

OMG, I am totally picturing you covered in egg bite casserole like the SJP in The Family Stone movie right now - you crack me up!!!! I need to get some silicon molds.

I had to get back on here to relate one very bad company or service that just popped into my mind - albeit it's been awhile. Although I loved my plastic surgeon in Chicago and I am very happy with the results, the billing was the stuff of nightmares. I think part of it might have been the billing company in Alabama that the hospital outsources its billing to - and part of it might have been the lack of coordination between said billing company, the hospital where I had my surgery (Weiss Memorial Hospital on the north side of Chicago), and the University of Chicago, where the surgeon's fee goes because my surgeon is on the med school faculty there. There were massive billing issues after both surgeries - and honestly, billing should have only been for incidentals, because I pre-paid my surgeries to the Univ of Chicago - and then made separate pre-payments to the (also outsourced) anesthesiology company. There were all kinds of issues - e.g., receiving a bill for $143,000 for a $23,000 surgery THAT I ALREADY HAD (PRE) PAID FOR (they later sent me a bill for the correct amount, $23K, BUT I HAD ALREADY PRE-PAID THAT!!!), being billed for follow-up appts that were supposed to be included in the package, threatening to turn me over to a collection agency if I didn't pay these aforementioned bills, etc. It was an enormous mess and ruined my trip to see "Hamilton", because it was during the time I was being threatened by the billing company for not paying them for the surgery I'd already paid for, and I was so upset that I couldn't focus on the play). Many, many phone calls and follow-ups to Weiss, Univ of Chicago, AND the billing agency to clear all of this up. And as I said, it happened after both surgeries. Although I loved the surgeon and his work, I'm never going back there again. UGH!

Ugh that is a terrible story. I feel like everyone I know has a medical billing nightmare story and I wonder how many small mistakes they are making that we are not ever catching! Glad you got it worked out!
I was treated at UIC many years ago and had a horrible experience with the same things....and many more.

QOTD- I would have to say that it was me that let myself down. Not doing enough research and looking with rose-colored glasses at what the reality of living on a tropical island is really like. It's not vacation that's for sure. I also had issues with the company that sold my house, lets just say I was disappointed, I lost money and leave it at that.
I haven't had any work for the last few days, so I'm getting freaked out. I need my paycheck to survive.
I also had issues with my serger, it was eating my fabric rather that cutting it off. I ordered a new blade for it, but honestly I probably just need to buy a new one. It's not one that I could get anyone to work on and not really worth spending any money on. I've had it for years, and been frustrated for years. Tension is difficult to adjust and many other problems. My Mom has 2 sergers and offered to send me one, I told her it would be too expensive to ship it, but I appreciate the offer. She has one set up for a rolled hem and it is so hard to set up she never changes it. She hasn't sewn for a while, she used to do it for a living and got burned out it's no longer fun when you have to deal with people and deadlines etc. I encouraged her to get back into it, all of my fabric is in her garage so she should be able to find a project to do.
