Mornin' Weekenders!

another beautiful day! We're going to an (outdoor) memorial service in about an hour, so I did a half hour of virtual Zumba (it goes for an hour, but I just wasn't into it today, so I quit after 35 minutes. I'll probably be out on my bike this afternoon, so I'm OK with that..I should more than make up for it). Other than that, not sure what's up today. I'm guessing we'll spend a couple of hours with MIL since she still needs help with a lot of things (like her cat, for one). The meds have really helped with her anxiety - but now she's exhausted all the time. Not sure if this is left over from before (her anxiety kept her up nights for at least two weeks, so she's very sleep deprived), or if the meds are making her more tired than she would be otherwise. I'm just hoping this all clears up. If she's still like this by the end of the year, I think we're going to have to move her into assisted living. She really needs the help.

not much else on tap. It looks like it's going to be a fabulous week weather-wise, so I'm psyched!!

QOTD: SF Jello with light Cool Whip, whole wheat crackers with hummus (although just a few because of the calories), a thing of vanilla Greek yogurt with about 2 t of unsweetened cocoa powder mixed in, topped with 2 T of light Cool Whip and a few berries. SF fudgesicles and SF popsicles. This isn't a common one, but last night I had a slice of 35-calorie Aldi's bread topped with 1 T peanut butter (peanut butter really fills me up - fat, you know!!). Speaking of which, I used to make these peanut butter/protein balls that I found on Unjury's Web site. I threw them in the freezer. I'd occasionally pop one in my mouth as a snack (fat + protein). Maybe I should make those again - it's been a long time. Oh - and there's a recipe for a crustless protein pumpkin pie here on OH's site. It was posted a couple of years ago. I make that sometimes in the winter - topped with light Cool Whip.

B: protein muffin, coffee with half & half

MS: may have a protein shake before I go to the memorial service. It starts at 11:00 and lunch is provided (Panera Bread is catering), but i don't know what time we'll be eating. So...I'd better have that shake so I don't overindulge at lunch...

L: I ordered the chicken napa salad sandwich (from Panera - we put in orders for the catering (from a limited menu), and that sandwich wasn't too bad calorie-wise

AS: ??

D: if I have time, I may make a Thai curry (with tofu and vegetables). Otherwise ?? Maybe crab cakes??

She's also elderly recovering from major surgery--I wonder if that combined with all the anxiety and medication drama has put her a bit behind on getting back to "normal"? Is there any home health care available for her age/income that could come in per a schedule so it doesn't fall all on you guys?

yes - I also think her age may have something to do with this as well. Plus she has COPD (stage 1 or 2 - so not horrible - yet). And she's underweight. So I wouldn't be surprised if all that is factoring into her slow recovery, too. That's why I figured we'd give it 'til the end of the year. If she hasn't mostly recovered by then (since it's still three months away), then she's probably not going to. And we may have to involve home health as it's not always easy to get over there every day. We do it - but - some days it's kind of a burden.

the kids are here all day. Yay. LOL. They've actually been well behaved. I got the flu shot Thursday and have felt junky since yesterday. My ears are so dang itchy it's driving me crazy(ier). Ha ha. Hopefully it'll pass today. It is better but still annoying. Last night was pretty hard pain wise. I see the neurosurgeon Monday so hopefully a plan will be started to move forward.

QOTD: it has been whatever isn't nailed down but that's got to change. I have L&F yogurt, chai tea and raspberries or other berries. I like jerky sometimes(I actually like biltong best).

b: one bar, coffee x 2

l: autumn squash soup with chicken breast added

d: roasted acorn squash, GF fish sticks

s: L&F yogurt and what's left of the zero sugar jerky.

I am sure the flu shot with your egg allergies isn't fun. hope the side effects go away soon.

I've heard of biltong, but never tried it. I'm not even sure what kind of meat it is!!

I spent a couple of months in South Africa about 20 years ago, but believe it or not, I never had biltong while I was there! Although I spent most of my time in a small village in one of the former "homelands". I think biltong is probably more common in the urban areas, where most of the Afrikaaners and people of British descent live.

The only biltong I've had is Stryve and Righteous Felon. The later is the best but can be pretty pricey. The Stryve biltong you can get the regular and the smoked you can get at Walmart. You can even get a small slab from them on the net to put on charcuterie boards.

I like that they're usually isn't much if any added sugars. I've only seen beef biltong!
