Sous-Vide Help

i got one of these devices a year ago on sale and still haven't used it! I'm a little unsure how to proceed with it. I've heard it makes meat really tender AND I want to try the egg bites so many of you talk about! We have no Costco here so I can't do that.

i'd appreciate any info or recipes!

I had to Google Sous-Vide so, clearly, i'm no help.

It's not hard to use at all! You just need a pretty deep pot for water and ziplock bags. Then just google the type of meat you want to do (or homemade egg bites) and you will see the temperature you need to set the device to.

I never heard of this before. Looks like you can cook the hermetically sealed meats still in their vacuum packed pouches.

Sous-vide is really easy once you get the hang of it!

Basically, you get a slider-top plastic bag, add a cut of meat and some seasonings (bottled marinades work great, or you can just use a chunk of butter and some herbs/seasonings), then cook it to the appropriate time and temperature on the app. I do salmon filets with butter and dill, or pork loin with lemon garlic sauce.

To do the egg bites, I get small mason jars and fill them with the egg/cheese mixture, then put them on the bottom of the water bath to cook. They always turn out great, they're pretty much foolproof!

With the jars do you need the metal lids or would the freezer jam jars work? I have some that have plastic lids.
