Actually the meatballs came out really good this time.... I think I have found my formula:

2 pounds turkey chop meat, 3 eggs, 1 tbsp olive oil, ½ c panko bread crumbs, few dashes Worchestshire sauce.... spices. I don't like chunks of fresh onion and garlic... so dry spices and usually about 1/2c Parmesan/Romano.

They are sticky feeling when you roll them and I bake them like 20 minutes. I scoop with a cookie scoop then roll with wet hands.

Olive oil gives it some good fat and moisture

Panko is much lower calories and I have tried alternative things like almond flour, but they come out tough.

W sauce helps give it a meatier flavor.

just out of curiosity have you tried coconut flour instead? I use it in my curry meatballs and it adds the bit of dryness to bind them and also a tiny hit of coconut, might be good with the thai flavors!

QOTD- I have a king sized memory foam mattress, love the size but after buying my Mom an adjustable frame I am ready for one.

I survived the surgery, and the pathology report is negative. Cancer Free so I probably didn't need to have the surgery, but it is good to know that there is no cancer. The breast reduction surgery turned out to be way more painful than I thought it would be. I have a high pain tolerance and I ended up getting some IV demarol before I left the surgery center. I also took a total of 2 dilaudid which is one more than I took with the RNY and hysterectomy.

I'm still not back to work. This time off work has made me realize I really don't want to go back. I have enjoyed the lack of stress and realize that it is killing me. Of course I will have to work but I'm not going to let it get to me or allow them to force me to do more than one person possibly can. Maybe without me there they have understood how much work I actually do!

Life is really too short!

Welcome back Julia! Glad for the cancer free report and hope that now that this is behind you, you'll be able to focus on getting out of that crazy place you work at! You are right about life being too short.
