Whats on your Monday menu RNYers?
Morning! I had my one-year checkup and labs look decent, but vitamin D is low. Iron is up from last check, and my B12 is high, so doc said I could stop taking daily tablets and do 3x weekly. Are there any side effects of having HIGH B12? I'll have to research. I don't think mine is crazy high, but it was higher than the normal range bracket. Doctor is not overly concerned about my slow progress, because he said "I'm glad you ARE making progress, and it's normal to slow down in winter months." I'm not sure I believe him, because I know I've been lax about going to the gym and staying active.
Breakfast: went out for brunch after our appointments, I had a chicken breakfast burrito (ate a couple bites of the tortilla, then just scavenged the innards)
lunch: probably just a yogurt or light snack mid afternoon since I'm just now eating breakfast at 10:30
dinner: Italian-seasoned turkey meatballs with marinara and ricotta

Uneventful weekend, watched some football on Saturday, read on Sunday. Sunday is laundry day, so I changed the sheets and did laundry. Went to dinner Friday night, food was good but shouldn't have had a drink, as I have an ulcer I should stay away from it, but not so good at it.
Today is contractor day at work, all the management employees have a holiday. So it's just us contractors and the union employees, so it's quiet here for a change. If I'd thought about it I would have worked from home today, but I needed Adobe Acrobat and I don't have it on my home computer, and I'm not willing to spend the $230+ for it out of pocket especially since I can't write it off anymore. I don't know about you but I'm not happy about the tax cut that was not for middle income people. I hate that they messed with the withholding's to make you think you were getting a tax break, but in reality with most of our deductions gone and less being taken out you end up with a much lower refund or having to pay.

Well, I survived DS's bday. Although he is moody and withdrawn he still wants me to bake for him. He became the loving boy of the past yrs and asked me if I could bake him my famous chocolate chip cookies AND cranberry bread. Of course I did. But all weekend it was like walking through a minefield for me. Don't mean to brag but my family always tells me my cookies are the best. I could smell them and they were oohing and aaahing while eating them so it was really hard not to taste. But I didn't. Cranberry bread was another issue. I had ONE slice throughout the weekend. Before WLS I would have made two loaves and would have eaten one loaf just by myself before anybody got home. So eating one slice throughout the whole weekend wasn't bad, wasn't good but wasn't bad. I even put the whole recipe in MFP and figured out my portion of it which was a wake up call : one slice 1/8 of the loaf is 359 cals, 55 g carb, 12.7 g fat, 5.8 G protein. As I mentioned before, I survived the bday and now it's a new week.

OMG isn't it crazy to think about when you would eat 8/8 of that bread...how many calories and carbs we were putting into our body on a daily basis? I mean I could legit almost polish off a pound of noodles back in the day. What in the ever-loving...???!!!
An entire cranberry loaf cake would be, what, 400+ grams of carbs...and you probably don't even have that now in a seven day period. And I bet on the day you would eat a loaf, you would have other food too. Isn't it crazy?
I think just having a slice is a major win.
What is your go-to cookie recipe? Would you share? Cookies don't tempt me but Kris and the kids LOVE cookies and I am always making different recipes I find online for them. Funny that I can resist cookies, but pizza, notsomuch.
I have always had a sweet tooth. In the past I would literally go without any food but fill up on chocolate, ice cream, various baked breads and cookies. My banana bread and cranberry bread are to-die-for, if I say so myself!
I found this recipe online. The secret is to have both the egg & butter at room temp.
- 8 tablespoons of salted butter
- ½ cup white sugar
- ¼ cup packed light brown sugar
- 1 teaspoon vanilla
- 1 egg
- 1 ½ cups all purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon salt (but I always add a little extra)
- ¾ cup chocolate chips
Directions
- Preheat the oven to 350 degrees.
- Using a stand mixer or electric beaters, beat the butter with the sugars until creamy. Add the vanilla and the egg; beat on low speed until just incorporated - 10-15 seconds or so (if you beat the egg for too long, the cookies will be stiff).
- Add the flour, baking soda, and salt. Mix until crumbles form. Use your hands to press the crumbles together into a dough. It should form one large ball that is easy to handle (right at the stage between "wet" dough and "dry" dough). Add the chocolate chips and incorporate with your hands.
- Roll the dough into 12 large balls (or 9 for HUGELY awesome cookies) and place on a cookie sheet. Bake for 9-11 minutes until the cookies look puffy and dry and just barely golden.Warning: DO NOT OVERBAKE. Take them out even if they look like they're not done yet. They'll be pale and puffy.
- Let them cool on the pan for a good 30 minutes or so. These should stay soft for many days if kept in an airtight container. But who are we kidding? In my household they barely last 3 hrs.
