Hey, I'm curious, did you ever use the method that was on Hells Kitchen? They had an episode where they had these fire pits & they put planks of wood like hickory or cedar over the fire coals & cooked the meat on top to capture the wood scent.
It looked really interesting, never saw food cooked this way b4.

I saw that episode as well. Yes, I have used that method quite a bit to cook Salmon. I've used it over live coals and on a propane grill. I think they had the planks too close to the fire but that's just my opinion. The purpose of this method is to char the planks a little so it both cooks and smokes the fish.
Here's a pic of some of my grills and smokers. It doesn't have all of them but you get the idea.
