One week post op.

What the NO told you does seem weird. My Stage 3 (after the full liquid stage and beginning Week 3 after surgery) included pureed soft fruits, soft veggies, soups, oatmeal, and beans. No pureed meats at that point.
I never ate any of that; just stuck with refried beans (thinned down) and my homemade mushroom soup with the mushrooms strained out and protein powder added. Also the soft scrambled egg and cottage cheese and plain Greek yogurt. It was 2 weeks of that, but I honestly didn't feel like "eating" anything else. At that time I was blending my own protein shakes with yogurt and liquid vitamins and that was a lot to drink down twice a day.
I still say you should call back and ask for a detailed list. I am surprised if you have not received a book with your diet progression spelled out for you. That is very important information WLS people should have written down for them so they can refer to it. I look at mine every day just to make sure I don't "accidentally" think I can have something I shouldn't.
To do a soft scrambled egg, I just cook on low heat and gently move the egg around until it is cooked through but still mushy. At this point, take very small bites of that. A big dollop of egg on your pouch can hurt!
BUT, if you are in Week 2, you probably should still be taking in mostly full liquids, puddings, and jello. Again, please check with your team to see which foods they advocate. I have noticed that each clinic seems to have a little different diet progression.
