QOTD - I love DST because I love having light in the evening - that said, the Spring Forward always sucks!

L - Veggie tray with Ranch so no actual protein there...

D- Chicken Paprikash (made with my own home raised chicken, switching out the sour cream from yogurt)
S - red wine (surgery isn't until 3/29 !!!)
One of my big challenges is that I host a "dinner party" every Thursday night for an ever growing group of friends. I will be starting a new job in a different city at the end of April, but still coming home for Thursday night dinner (TND) every week. My new job is allowing me to work remote on Fridays :) I've managed my weekly dinner through Ramadan each year, so I'm good at making and feeding others while abstaining myself, but it will still be hard. I think the hardest part will be my red wine (I'm not Muslim but that's another story). Tonight I'm making chicken paprikash. My husband has cooked three chickens in a crockpot, and by the time I get home he'll have them deboned and the meat set aside. I'll saute onions and a little garlic, then make the sauce out of the broth from the crockpot. For dumplings I'm using whole wheat Gnocchi, and I'll use yogurt in place of sour cream :)
Oh, and "dinner party" has quotes around it because its more like a super casual gathering of friends who come over and hang out for the evening. The first five or ten years I made courses and set a nice table... now it's far less structured and served buffet style form the stove

Yep, late to the party again! Work has been crazy lately and I haven't been able to read or post until the evening. It will probably be like this for another 1 1/2 weeks. I had a quarterly financial audit today which went very well. Yaaay! Now I'm getting ready for the bi-annual licensing.
