A GREAT alternative to potatoes...(in a soup)

Hey guys, I just have to say, at 4 weeks (tomorrow) post op - It is hard to find something that settles right in my new tummy. I was placed on soft foods almost 2 weeks ago, and was told that 2 weeks from then, I could try cooked meats and add in new foods. The past 2 days have been so rainy, that a vegetable chicken soup sounded like a winner - warm broth, over cooked veggies, and boneless/skinless chicken thighs.....heck yes! Okay, chayote squash guys - amazing! Put it in place of your potatoes, and I promise you won't hear any complaints. It's really like eating potatoes and though not a great source of protein, it does have low calories, low carbs and low sugar (almost none) and goes great with the protein of the meal (chicken thighs). I just thought I would share.

When I make chicken soup I use chayote-- but I don't care for the taste of it. I much prefer the taste of turnips.

I'm not a big fan of turnips, or collards - but sure do love me some chayote squash :) lol
