What's On Your Monday Menu, RNYers?
Good Morning! I hope everyone had a wonderful weekend! The weather was so nice here; the clouds even held off long enough for us to see the eclipse last night, which was pretty friggin' cool! I tried to take pictures, but they just made the moon look like a little red dot in the sky. You'll just have to trust me that it was awesome. LOL I also made the pumpkin cranberry granola, which is super delicious. I was in very real danger of eating the whole batch before it even cooled. I blame NYMom.

Good morning! I had a great weekend! I went to see my daughter for parents weekend at the University of South Carolina. For the first time since I can remember, I could walk and I mean we walked and walked and walked. I went to a class with her (which was really fun), we went to the game and tailgated on Saturday - we walked from a friends house which was easily a mile from where we tailgated which was a mile from the stadium and walked back after the game. I lost 4 lbs in 4 days from all of the exercise and only eating 3 meals a day with no snacks. She kept telling me how great it was that I could do everything with her. It was a whole new experience.
I must have the recipe for this pumpkin cranberry granola . . . sounds amazing! I must have missed it friday :(

That's a great campus--so pretty there! Congrats on your multiple NSVs :)
OMG, you're looking amazing! You need to change your avatar, lady! And even BETTER you're feeling amazing and keeping up with your daughter. Go you!
I'm SUPER jealous that you've found the L&F Apple Pie. I out and out hoarded that stuff last year and I'm desperately hoping it will be back at my grocery soon.
