What's On Your Thursday Menu, RNYers?
Chicken piccata is an entrée from God's own menu. LOL
You dredge chicken cutlets in flour, pan sear in a little olive oil and butter and then let them simmer in a sauce of chicken stock, lemon juice and capers. So good. SO. GOOD.
Awesome NSV, Kristen! And good luck on your race, Mamata! You will kick ass :)
Hmmm inspiration...well a few things I love:
Slowcooker - add chicken, lemon juice, garlic cloves, chicken broth, and cook for hours. At the end you can whisk in 1 or 2 tbsp of flour/water mixture to thicken it a little. Tender and delicious!
Turkey meatloaf or turkey meatballs with an egg, sautéed onions, chopped garlic, a little bit of breadcrumbs.
Steam shrimp in 1:1 parts vinegar and water with a few tbsp of Old Bay - YUM!
Trader Joe's grilled chicken strips mixed with light mayo and dried cranberries and almonds.
Turkey chili is a favorite of mine as well :)
My menu is a big ole question mark today to some extent.
B: iced coffee with half and half, 1.5 oz havarti cheese, 1 hard boiled egg, 5 little spicy red peppers from the olive bar (I am obsessed with these)
L: Grilled chicken breast from Trader Joe's with light mayo, dried cranberries, almond slices
S: ?
D: ? I will be at a Nats game which was rained out on Monday
E: I did solidcore this morning and I am sore as hell. It feels amazing. I took a Bollywood dance class last night. I am really liking mixing this up. I am 3 weeks from an arm lift so I am trying to get as strong as possible :)
Have a great day, everyone!

I love reading all these NSVs and race prep posts. So inspiring!
I do not have a good "go-to" dinner routine, and never have. I am one of those freak people who has all of my energy and ability to think at about 5am, and it goes steadily downhill from there, so by 5pm, I literally cannot make good choices anymore.
So generally, I have more elaborate breakfasts and lunches (not so much today, haha), because that is where my head is in the morning. By dinner, I just eat a yogurt, shake, or whatever I can easily find that supplements the protein needs I have left for the day.
...9 weeks out...
Breakfast: coconut chips and babybell cheese
Lunch: 1/2 c baked beans
Dinner: shredded chicken with celery, low sugar dried cranberries, real bacon bits, and shredded lite cheese over salad greens
Snack: Premier Protein Shake (yuck, I am really starting to hate these all of a sudden, but nothing beats the convenience of 30g of protein on the go!)

Exercise
Still taking it easy today, because the pain in my incisions is still present (but getting a little better!), so I am skipping yoga. But I will do 45 minutes on the elliptical later this evening.

Right? Blech.
I need to invent the next thing that is as convenient and has as much protein. Any ideas?
on 9/24/15 11:40 am
Yes, if I'm home I use Unjury and blend up some delicious shakes ;) The Premier are just for the days that I am on the road for 12-14 hours with no access to a fridge.
I suggest you stand on your desk, do a happy dance and shout to the world... "I am in a size 10 and a size Medium. I am queen of the world." Do this in lieu of food...
I personally bow to your greatness.
You know I haven't wintered a fall or winter season yet with WLS but I am sure that chili, beef veggie soup, turkey meatloaf, and lots of pressure cooking will happen this season. I can't wait until next week (payday) so I can stock up on some meat to pressure cook. I think I am going to try a turkey breast next! I can't wait to see what everyone posts so I can get some ideas.
My menu today:
B: Out of protein shakes so I made my own: 3/4 cup of FairLife 2% milk with a scoop of Myofusion Advanced protein powder. It wasn't bad but I had to drink it before I left home or it would have been pudding by the time I got to work... that doesn't sound appetizing to me. I also had Tea and I had to put sugar in it, not much because I would dump otherwise but it really upped my carb grams... I needed to have the caffeine!
L: Chicken salad (2 oz chicken, 1 tablespoon of light mayo, 1 tablespoon of sweet relish, celery seed)
S: 1 oz of Cabot sharp cheese
D: Ham and cheese omelet and sauteed parm zucchini
Totals: Calories - 964 (darn sugar), Protein - 77, Carbs - 61, Sugar - 52 (damn), Fats - 47
Vits/Water: going in. Exercise: I am still cleaning my son's bedroom (it is THAT bad). The problem is that you cannot turn an extra room that you store all your candle supplies into a bedroom without moving everything out... but, then, don't move back in with your Mom unexpectedly. And I am also going to steam the bathroom walls... LOL!
Everyone have a good day!
Silly, don't celebrate with food... Celebrate by buying more clothes!! Congrats in that NSV!
Our fall staples are Chili, beef stew and chicken soup (homemade). Satisfies most in my house (I've got one picky eater). We're in full road trip mode, will be at my parents by 3. Considering, my menu is at their mercy, but my mom did ask what I was able too eat so she could cook appropriately :-) We stopped at waffle house this morning, was so weird not getting a waffle, (you know, when in Rome...).
B: scrambled eggs with cheese, bacon and 1 slice raisin toast
L: ?? But, I have left over stewed chicken from last nights dinner if nothing else is as good a choice.
D: ?? I did pack protein powders just in case.
