Losing slow-ish, what were you eating early on?

I haven't - because that is one of the only veggies I hate hate hate. BUT I promised my husband I would try it after surgery since I know tastes are said to change. It's on the menu for next week lol. That and refried beans. 2 things I hated before but I'm hoping I like now!!

It tastes good. I was not a fan of that veggie but now I have even faked my husband with them.

I boil the cauliflower with several cloves of garlic. When tender, drain well and press the excess liquid from the cauliflower.  Throw garlic,  cauliflower and about three light Laughing Cow cheese wedges into a food processor.  Season to taste.

I could eat this everyday.  It has the same texture as mashed potatoes and the garlic helps to mask that strong cauliflower taste.  Good luck!

I kind of love garlic so that doesn't sound awful to me actually. Do you mean the soft cheese wedges? Because I like the way that sounds.

I can't stand cauliflower but when it's prepared like this, I could eat a whole bowl of it! Even my teenaged step kids eat it by the pile, so that is saying something.  Fiddle with it to suite your taste.

By the way I'm a week post op so I'm still having only protein shakes and clear liquids, so thank you GeekMonster for giving me a food dream to get me through the night!!!

The first time I made this, I thought I'd died and gone to heaven.  I'm an Irish girl who loves potatoes.  They would be my last meal on death row.  But I know they are badbadbadbadbad for me during weight loss.

Because I'm well, INSANE and moderately OCD, I was concerned about the carbs from making mashed cauliflower.  I mentioned it to my surgeon who assured me that he's never performed WLS on a patient because they eat too much cauliflower.  Point taken.

I calculated this using MFP's recipe tool, and for a 1/2 cup serving, it's 32 calories, 5g carbs, 2g protein.  I used four of the Light cheese wedges in my original batch, but I found that three is enough to work as a binder for the mashed cauliflower.

I usually roast my cauliflower and my garlic...and then toss it in the ol' food processor. Roasting it brings out deeper flavors. I like the cheese idea, I hadn't tried that.
