Here is a recipe for white bean chicken chili. I lived on it for the first couple of months. Makes alot and freezes well!!
White Bean Chili
Ingredients:
1 lb. dried Great Northern Beans or white cannelli beans
2 medium onions chopped
Olive oil Pam
2 (4 ½ oz) cans chopped green chilies undrained
4 cloves garlic, minced
2 tsp. Cumin
1 ½ tsp. dried oregano
Dash of ground red pepper
6 cups of chicken broth
5 cups chopped cooked chicken
1 cup shredded Monterey Jack Cheese
Salt & pepper to taste
Low fat Sour Cream
Salsa
Sort and wash beans, place in large Dutch oven, cover with water 2 inches above beans; let soak overnight. (Or you can do the quick soak directions on back of package of beans)
Drain and set beans aside,
Cook onions in olive oil Pam in Dutch oven over medium high heat stirring constantly until tender. Add green chilies and next 4 ingredients; cook 2 minutes stirring constantly.
Add beans and chicken broth.
Bring to boil; cover, reduce heat and simmer for 2 hours until beans are tender, stirring occasionally.
Add chicken, 1-cup cheese and salt and pepper to taste.
Bring to a boil; reduce heat and simmer uncovered, 10 minutes, stirring often.
To serve, ladle chili into individual soup bowls.
If you would like you can top each serving evenly with sour cream & salsa.
It is good just plain also.
Yields 13 - 1 cup serving is 4 pts per cup
