What exactly do they do for the pre-admission tests?

Different doctors require different tests, but typically they want a sleep study (to determine if you have sleep apnea or not), a gall bladder ultrasound, cardiac clearance, a psych evaluation, bloodwork and an endoscopy.

I listed the pre-op tests Dr. Pohl required for me. Once those were completed, I also had to go for pre-admission testing at Roger Williams Hospital and I suspect you were asking about that! As I recall, I had to have a chest xray and I think they took my blood pressure and drew some blood, but I'm not positive. I also met with the anesthesiologist who explained what they would do and had to answer medical history type questions. They want to find out if you've had any reactions to certain drugs/anesthesia, etc. Don't worry, it was all painless and easy!
