Food Finds...
Hi Everyone!
On the RNY board, I've read a couple of times about TVP - it is Textured Vegetable Protein. It is dehydrated soy flakes that can be used in many many recipies in place of meat or rice. I found it at Job Lot in the bagged foods area. It was $2.99 and so worth it! In 1/4 cup is has 80 calories 7 carbs and 12 grams of protein.... Yup 1/4 cup, 12 grams of protein! I couldnt believe it!
I made it this weekend instead of rice. You mix 1 cup of TVP into 7/8 of a cup of boiling chicken stock/beef stock/water. The TVP takes on the flavor of whatever you reconstitute it with. It was pretty good but could have used some salt and pepper or onion/garlic powder to doctor it up.
I also used it in place of breadcrumbs in my turkey meatloaf - I just had one for lunch and it was great! No difference at all!
Some other ideas for using TVP are... 1/2 oatmeal 1/2 TVP to up the protein, reduce the carbs and calories. Make Fried Rice by using TVP reconstituted with any flavor broth, some scrambled egg, onion pieces, soy sauce and any other veggies you like!
My second food find was at Job Lot as well - Sugar Free Chunky Peanut Butter! It's delish!!! Low fat, no sugar and 9 grams of protein per 2 teaspoon serving! Yum!!!

I've used the TVP also. I make a "meat pizza" using 1# ground turkey and TVP for the "pizza" base. Here's my crustless pizza recipe......... You could always use more TVP and less ground turkey to up the protein value. I only used 1/4 cup TVP for the entire recipe.
Ingredients
Turkey, Ground turkey, 93% lean, 16 oz Flax Meal, 2 Tbsp Onions, raw, .25 cup, chopped McCormick GrillMates Montreal Chicken Seasoning, 2 tsp Victoria Tomato Basil Pasta Sauce, 1 cup Yellow Peppers (bell peppers), .5 pepper, large (3-3/4" long, 3" dia) Green Olives, 1/4 cup (optional) Mushrooms, fresh, 1.5 cup, pieces or slices Mozzarella Cheese, part skim milk, 8 oz (or low fat cheese of choice) |
Directions
Preheat oven to 400 degrees. Reconstitute TVP by placing 1/4 cup into bowl and covering with 3/4 cup very warm water or broth. Let stand about 15 min and drain off any remaining water. Combine ground turkey with TVP, flax meal, onions and seasoning. Mix well, use your hands for best results. Press mixture into large flat baking pan with sides, making sure you extend mixture all the way to the edges, and there are no gaps or breaks in the meat mixture. Place in preheated oven for 10-15 minutes or until meat is brown. While meat is browning, saute onions, mushrooms and yellow pepper in cooking spray (Pam). Remove pizza base (meat) from oven when brown. Drain any fat and oil from pan, and pat meat with paper towel for further fat removal. NOTE: Expect this pizza base to shrink quite a lot! Spoon pasta sauce over top of meat, add sauted vegetables and sliced olives. Cover with mozzarella cheese. Return to oven, and bake another 10 minutes or until cheese is melted. Remove from oven and cut into 8 equal pieces. Serves 8 "regular" appetites or 16 WLS appetites. |

This TVP sounds great! next time I am at OSJL I will definately grab some.
I great thing I found last weekend at Trader Joes was Turkey Jerky. OMG was it good!! And it wasn't all dried out like most jerky- very moist still. It was so tasty, no fat, and high protein (forgot the numbers since the whole family loved it and we scarfed up the bag already!)
