I made your cookies and they were GREAT! In fact, they were a LIFESAVER ... the ONLY thing I could keep down (believe it or not) last wee****il I had an EGD with dilation yesterday! (He stretched my stoma from 6 mm to 18! ) Everything I had eaten for past 3 weeks came right back up but your cookies!!! How many grams of protein per cookie? I calculated 6, but I was hoping it would be more. I yielded 20 cookies from your recipe. I made them into quarter size balls then flattened them with a fork crossways. I did bake them differently ... I baked at only 325 for 10-12 min. and they were chewy! Yum! Hold together well, too! HINT to others: spray your bowl, measuring cup for the peanut butter, stirring spoon, fork, and pan with Butter Pam Spray to keep the peanut butter from sticking!  The Splenda sticks to the fork for making those criss-cross marks with "sugar" on top of the cookies when you spray it with Pam!
