I am pretty excited right now!! First of all, it was great to see you Deb! You look awesome!! I WANT YOUR ENERGY!! I am so glad that you feel so great!

Second, I am rejuvenated after the Transition Class tonight. If I want to lose weight and be healthy, I need to do what I am supposed to do! I wanted to stay for the support group but after learning how far off I am, I figured I should go home and EAT! I had only had 1/4 cup of summer squash casserole and maybe 16 oz of fluid all day. I DO LOVE MY SUMMER SQUASH CASSEROLE SO MUCH but now I know I am being stupid! So...tomorrow I am going to get up early, and make myself do it all! 3 protein shakes and 3 protein packed meals and go for a walk!!!! I am so excited to have the "get-up-and-go" attitude tonght!! Deb, you really inspired me! Thank you for the hug and the smiles!! Keep up the good work!! I am going to check in and report how I do tomorrow night!!

Marie - great attitude!  You sound sooooooo motivated!  Isn't it nice to meet some of these folks face to face?  Glad to hear you and Deb hooked up together at the meeting - great support!

I love summer squash - may I have your recipe for summer squash casserole - sounds good!

Sure Pam!
5-6 yellow or green squash
1 onion sliced into rings
8 oz of low fat sour cream
1 can of cream of mushroom soup (or any "cream of"...I used to use Crm of chicken)
Bread crumbs
low cal marg product of choice

Steam squash and onions to desired texture...I like mine mushy/well cooked. Drain well.
Mix desired amount of bread crumbs and melted marg product (I use Promise lt)
Sprinkle a little of the bread crumb mixture on the bottom of a casserole dish. 
Fold in the soup and sour cream into the squash/onions and pour into casserole dish.
Sprinkle remaining bread crumbs onto the top and bake for 20 minutes at 350. I am almost 4 weeks out and have had no problem with it at all...I just love it!!

hi marie,  it was great to see you at the meeting or just leaving. thank you so much for the compliment about all the energy that i have. yes it is unbelieveable that i have all this enery and am doing very well after this major surgery. i thought that because of my age that i wa going to be the one that had a lot of complications but i guess the age proved me wrong.  hope to see you at the next meeting.
