Recipe: Iced Coffee Pie

I mentioned this pie I was making for a work event at the RW meeting last night and a few of you asked that I post it.

It's a recipe a friend got from her Weigh****chers meeting. If you like coffee ice cream, then I highly recommend this! So here goes...

ICED COFFEE PIE
 

1        Reduced fat graham cracker pie crust

1                 pkg. Sugar free/fat free Instant vanilla pudding

1                 cup Skim milk

2                 tbsps instant coffee granules

1                 8oz. container of Light Cool Whip

 

Mix together pudding, milk and coffee. Fold in Cool Whip. Remove plastic covering from pie crust and set aside (it will be used later). Pour mixture into crust and freeze 2 hours uncovered. After 2 hours put plastic cover on pie and keep in freezer until ½ hour before serving.

 

Makes 8 servings (or probably 16 WLS people servings. lol) 

(Reg servings for WW purposes: 4 points each serving)

I use a similar method in making my fat free espresso cheesecake  (the instant coffee)
