Last Saturday Gathering and Sugar Free PB Pie!!!

Hi Y'all!!! I hope you are all having a great week so far!! I am soo busy but I wanted to post that I had sooo much fun on Sat at Angela's!!!! I am for sure going to the next one you all are soo funny and sweet! So here is the recipe for the Sugar Free peanut butter pie.   1 8 Oz pkg cream cheese softened 1 level cup peanut butter( of your choice) I used Skippy either regular or reduced fat. 1 level cup splenda 1 8 oz tub cool whip light ( or of your choice) 1 pkg sugar free grahm cracker crust ( I could not find this soo I used sugar free cookies mashed up to make my own crust. I used the vanilla filled wafer ones but whatever you like you could use.  In  a bowl mix with a hand mixer cream cheese until smooth. Add peanut butter and splenda, blend until creamy. With a large spatula gently fold in the cool-whip until all are incorporated( do not over mix) place in crust and refrigerate for 2 hours. This is very rich so a small portion is key! I got this recipe from the book Living After WLS!! Enjoy !!!

It was so good!!  Did you used the splenda for baking or just the normal one?   I am going to adapt my cheesecake recipe to make it WLS friendly for next get together

Thank You!! I used the regular big bag of Splenda. I am doing the same to try to revamp my receipes.  DD
