Braised Pork with apples and onions with Mashed Caulifower!

I received a wonderful gift (THANK YOU SUSAN!) of the "Eating well after WLS" book a couple weeks ago and last night my husband and I decided to try one of the recipes out of it since we had a small pork roast we werent sure what we were going to do with.  I also was curious about the mashed cauliflower I'd read about on here, which was also in the book. So we went all out and made both last night.  All I can say is WOW...it was wonderful! Now I cant wait to try some of the other recipes. Anyone have a favorite they recommend?  Oh, and if anyone wants the recipe for pork or the caulifower let me know, I'll be glad to pass it on, but I'm afraid it will have to wait until I get home from work.

It sounds delicious but unfortunately I can not eat pork anymore!!!! It doesnt agree with my band AT ALL...OUUUCCHHH!!!!!!!!!!!!!  lol

Sounds yummy. I've had smashed cauliflower and its awesome... tastes just like mashed potatoes!
