i made mostly sugar free apple crisp last night and i just have to share the recipe. HAVE TO!!!!! It was so good - I never told anyone it was sugar free, and they didn't believe me when I did! I did keep 1/4c of the brown sugar, I figured spreading it over the top of a 13x9" pan, couldn't amount to very much sugar per serving. Can't have apple crisp without brown sugar!! INGREDIENTS 3 1/2 pounds apples - peeled, cored and sliced - [then dusted with a spenda/cinnamon mixture to your liking] 1/2 cup butter/margarine 1/4 cup brown sugar 3/4 cup Splenda (plus some extra for dusting the apples) 1 cup all-purpose flour 3 packets instant maple and brown sugar oatmeal (LOW SUGAR box) 1 pinch salt 1/2 cup chopped walnuts 1/4 cup Sugar Free maple syrup DIRECTIONS Preheat oven to 350 degrees F (175 degrees C). Place apples in a 9x13 inch baking dish. In a bowl, cream together butter and sugar. Stir in flour, instant oatmeal and salt. Fold in walnuts. Sprinkle oatmeal mixture evenly over apples. Drizzle with maple syrup. Bake in preheated oven 50 to 70 minutes, until apples are tender and topping is golden.

Oh Kristen...that sounds heavenly...I am 4 days pre-op and will now have to wait for this. I wish I had time this weekend to try it, but I have a lot to do before Tuesday. I did print it because I will no doubt try it when I am far enough out to eat food!! Always nice to get bariatric friendly recipes!!! Thanks!! Kristen D
