Come on everybody, share your low fat low carbs recipes...

General Tao Chicken

In the real recipe, we have to bread and fry the chicken... This is an healthier alternative...

2 pounds of chicken breast (skinless and boneless), cut in cubes.
1 tbsp vegetable oil
1 tbsp sesame oil
1/4 cup fresh ginger, grated
1 cup chopped green onions
1 cup of water
1/2 cup white vinegar
3/4 cup splenda
1/4 cup corn starch
1/4 cup soy sauce
2 tbsp oyster flavoured sauce
2 tbsp hoisin sauce
1/2 cup ketchup

Cook the chicken in the vegetable oil in a t-fal skillet til it is done. Add the sesame oil, ginger and green onions. Cook at med-high for 3 minutes. Add water, vinegar and splenda, and wait til the splenda has dissolved. In a small jar, dissolve the corn starch in the soy sauce. Add this and the hoisin, oyster sauce and the ketchup. Mix well and let cook 2 min, just til the sauce thickens.

Another family favorite :

Mushrooms and onions chicken

2 skinless boneless chicken breast
1 tbsp olive oil
1 onion cut in rings
1 garlic clove chopped
1 cup beef broth
2 tsp red wine vinegar
1 tsp of brown sugar
1/4 tsp thyme
1 small bay leaf
1/2 cup small mushrooms
1 tbsp corn starch
1 tbsp cold water
salt and pepper

Brown the chicken in the oil, til it is brown on each side, in a t-fal skillet with a cover.. Then add onion, garlic ,beef broth, vinegar, brown sugar, thyme and bay leaf. Bring to a boil, then cover, reduce the heat to med-min and let cook 30 min, til the chicken is tender. Add the mushrooms at mid time. Dissolved the corn starch with the water and put in the skillet, stirring til the sauce thickens. Add salt and pepper to taste.

Never had enough leftovers to freeze them !!! I am sure those should freeze well ...Let me know if you try.

Here is a suggestion on the breaded chicken. I now replace the flour with a good quality whole grain flour and I bread the pieces and sautée the meat in olive oil or soya oil or raison oil (all good fats) and the meat browns well and it tastes great. The carb content is there but it is good complex carbs.

I have frozen similar recipes with no problem. Sometimes you need to add a bit of chicken stock when warming to smooth the sauce out. It tends to stay more clumpy once frozen.
