Hi everybody!  I was sick with the flu and a laryngitis last week, so I wasn't very hungry... And that helped me lose the last pounds to reach goal!  I REACHED MY GOAL friday!!! I'd never thought I could make it... When I started at 320 lbs, losing 170 lbs looked impossible to me. I was looking at the other's success and that was not for me, I thought I could lose 75 lbs and that will be all... But after surgery, when I started to lose weight, I decided that I will be able to do that, I was not having surgery to lose some of the weight, but all and I convinced myself that it will be possible and that I can do it if I work hard for it... And I DID IT! I am so proud of myself, because often I start things that I don't finish... Now I have to start to maintain, and I have to overcome my fears of gaining back... But with the help of my sleeve, my exercises and the most important of all, the support of you my friends, I can do it to!!!

Thanks all of you for the great support you gave and are still  giving me, during the good and bad moments. This journey is something difficult to understand for people who don't live with obesity and surgery, but you were here to listen and help when I needed it... I love you and you are all part of my success !!

Have a nice week my good friends!!

((big hugs))

Congrats on making goal!!!!  That is so awesome!  Derek... 0.8 of a pound is hardly anything!  you will be great.

One recipe I used to eat all the time before surgery (when I could digest it)  was easy breezy.  I took asparagus and sprinkled parmesan cheese and lemon pepper on them then placed them in the toaster over until cooked to my liking.  I could eat the whole bunch, they were soooo flavorful and yummy!!

Also, try lettuce wraps... similar to those they make in Asian type restaurants.  Take chicken stir fry with veggies like snow peas, carrots, water chestnuts, red peppers, etc and wrap it up in a lettuce leaf.  I like boston lettuce, but any would work I am sure.  Also -  I had a great recipe for eggplant lasagna.  Instead of using lasagna noodles you use slices of eggplant... I will try and find the recipe but it was amazing!  I used ground turkey, but I am sure beef or chicken would work just as well.  It used low fat cottage cheese I believe instead of the ricotta.

kebabs are always fast and easy and are low carb... use red, yellow, and green peppers, onions, tomatoes, and whatever else floats your boat!

I also saw somewhere where they made "fake mac n cheese"  instead of noodles they used roasted cauliflower  which may be yummy!!  I will search my best to find these and post!

It is so great to ready everyone post.  CONGRADULATION to all of you my friends.

This morning I weighted at 300.0 sharp ... so I know that next week I will kiss this 3XX good-bye, it is such a great feeling.

In summary, I have lost 5.8 lbs last week and 85.5 since I started the Protein diet. I am looking at the number and I can't still beleive it.

Also, when I was younger my grandmother and mother would make a stew called Calabacita con puerco  (squash with pork) that was amazingly filling and hearty... yet not that bad carb wise.  Here is a decent recipe-  although I make mine more like a soup-  so I boil my pork chops and use that as my broth after I de-bone and cube my pork.  http://www.foodnetwork.co.uk/recipes/calabacita-con-carne-de -puerco-ru345852.html

In it was yellow squash (others are ok-  but that one is my fav) pork (i used porkchops but tenderloin is ok too) onion, tomatoes, corn, garlic, salt and pepper.  I know some people use peppers and chili in their's but its all according to taste.  I also season it with a bit of cumin, salt and pepper.

I am sure there are recipes online for it... and maybe you could even omit the corn.  But it is something other than just chicken and beef.

For a snack, if you like something spicy,  I used to make low fat jalapeno poppers... get low fat cream cheese, bacon, and jalapeno peppers.  De-vein and de-seed the peppers after slicing them in halves length-wise.  spoon some cream cheese in then wrap with a slice of bacon... I use my George foreman grill ... load up the grill with my poppers (I secure the bacon with a toothpick)  and close the lid.  The bacon grease will drain out of the grill, and when they are done you have this yummy, cheesy, spicy snack!  No carbs!

Also, if you have an indoor grill pan-  grilled squash and zucchini are yummy, just slice in 1/2 " slices drizzle with olive oil, salt and pepper and grill!!

LOL  one more-  I LOVE Montreal steak seasoning... loved it even before I got here.  I thinly slice up yellow squash and pan cookit in olive oil with the seasoning... SOOOO yummy!!  Hope these help!!
