Low sugar apple crumble ...and raspberries muffins...

I have modified my recipes to fit my new lifestyle.  I didn't tell my kids that it was low sugar, and they stated that it was the best crumble they have ever eat!  And the muffins are a favorite since a long time. I used to do them with white chocolate chips before...

APPLE CRUMBLE

For a 9 X 13 dish ( you can do half a recipe if you like, but this big crumble disappeared in a few minutes at my home, with 2 teens...)

8 apples peeled, cored and cut in slices
1 tbsp lemon juice
1/4 cup splenda
4 tbsp Da Vinci pancake syrup ( or any sugar free maple syrup)

Put the apples in the dish, with the lemon juice, sprinkle with splenda and syrup.

1 cup of rolled oats
2 tbsp flour
1 tsp of cinnamon
1/4 cup of splenda brown sugar mix
2 tbsp of chopped nuts
2 tbsp butter

Mix together well and sprinkle on top of the apples.
Cook at 375, for 25 to 30 min, or until the apples are soft and the top golden brown.

LOW FAT LOW SUGAR RASPBERRY MUFFINS

1 cup rolled oats
3/4 cup of greek yogurt ( or 0 fat sour cream )
100g ( small container) of sugar-fat free raspberry yogurt
1/3 cup splenda brown sugar mix
1 egg
 2-3 tbsp of Da Vinci SF Syrup ( white chocolate or to taste...) (if you don't have syrup, use almond extract or lemon peel, or other flavour you like or you can just skip this step...)
1 cup of flour
1/4 tsp salt
1/2 tsp baking soda
1 tsp baking powder
1 cup of raspberries ( fresh or frozen)
You can also add 1/4 cup dark chocolate chips

Mix the oats with the yogurt, and let stand for 5 min. Add splenda , lightly beated egg, and flavouring.
Mix together the dry ingredients, and add to the batter . Mix well but not too much.. Add raspberries ( and chocolate if desired) and mix delicately.
Put in mini-muffin pan, sprayed with pam.
Cook at 375 approx 15 min .
yields 24 mini muffins

Yes it is all about adapting our favourite recipes.  You have been doing well. They sound great.  enjoy.    Doris        I wish I had the surgery. Oh to just get on the bench.

Yes, I sure wish you will get it, sooner than later! But these recipes are not only for the post-op, every member of my family enjoy it, just bigger servings!!

I change alot of my recipies as my husband is borderline diabetic and I try to keep the sugar  as low as possible.  Today I stuffed a chicken and made the trimmings.  I made pumpkin tarts. froze them to control them.    Tomorrow I am going to do 2 shakes and then dinner.  I go back to the Dr. on the 25th.  I did go to Montreal Dr. Atlas he said he would only do the Lap Band. I wanted the RNY.  The border is holding me up.     Doris
