Crustless Quiche Recipe

I thought I would share this recipe.  Here is a delicious quiche recipe that is high protein & low carb and very nutritious.

6 eggs (or 3 egges and 1/2 cup egg whites)
1 cup 1%milk
1/2 cup shredded parmesan cheese
1 cup skim milk mozarella cheese shredded
2 tbsp of whole grain, wheat flour

whip the eggs and then add the other wet ingredients and mix well. Add salt and pepper to taste.
Add other spices you may like. I add thyme and celery seed.

Add veggie mixture. I use whatever I have on hand.  Like mushrooms, leaks, zucchini, yellow peppers (sautéed in olive oil)
5 asperagus tips (frozen can do)
diced or shredded ham about 3/4cup

Place in a round deep pie plate (preferrable glass) sprayed with a nonstick cooking spray. I use and olive oil spray.
Pre heat oven to 375 and cook for about 45-50 minutes.

I eat this warm or cold. 

For individual portions, place in ramkins about 3/4 cup size and cook in a bain marie. I would cut the recipe in half for individual portions as it would make too much for one person.

Hi Brenda, great idea to share your recipe... As I am the only one who eats eggs in my family, I will have to cut this recipe but I will sure try it . Thanks!
