This was SOOOOO good, rich, filling and satisfying! Try it! Reduced-fat graham or chocolate prepared pie crust (I used chocolate) 8 oz. light cream cheese, beaten with 1 cup Splenda. I added a cap full of vanilla. Mix in 3/4 tub of SF Cool Whip. Spread into pie crust. Top with fat-free, SF chocolate instand pudding made with skim milk. Chill for several hours. Serve with dollop of the rest of the Cool Whip.

I saw this recipe on the mainland today and I had everything but the crust. So, I made it crustless and put it in little dessert dishes. It is so yummy!

Nancy, you just made me so hungry! Now I want some and I don't have the ingredients in the house... I'll just have to wait until I go grocery shopping on Tuesday. All kidding aside - thanks for the recipe!

I'm glad you liked the scallops. They are one of our favorites! I love this chocolate pie. It's really rich, and their is NO guilt. I like Beths idea of skipping the crust and just putting it into little parfait glasses. You could definitely serve this to company and they would not feel like they are eating "diet".
