I'm so excited!
I'm doing a wedding cake for a friend and I thought her wedding was February 23rd - which made inconveniently on the same day as a cake show here in town. I really wanted to enter a cake in the tasting competition this year, but I couldn't imagine trying to do a wedding cake, a grooms cake and a competition cake all for the same day! Well, it turns out her wedding is on march 1st instead! Yay!!
The category I'm going to enter a cake in is "texas" cakes - something using local flavor. I'm thinking of doing a chocolate chipotle cake with a Mexican vanilla custard filling drizzled with chocolate ganache and frosted with agave nectar (locally made) sweetened whipped cream frosting.
I'm going to do a test cake tonight and run it by my co-workers to get their feedback!
