yummy scallops!

Okay, I'm over my little rant... 1 lb. scallops as many pieces center cut bacon as you have scallops Microwave bacon on paper plate and paper towel, until semi-crisp. Wrap around scallops and secure with toothpick. In a 450 oven, heat 1T. olive oil and 1T. butter in a small casserole or baking dish. When sizzling, place bacon wrapped scallops in dish. Sprinkle with garlic salt. Cook for 5-6 minutes, then turn, sprinkle again. Delish!!!! I ate 3 scallops and was VERY satisfied with this!

I like scallops too, but cooked with a little less fat. I like them brushed with olive oil and rolled in bread crumbs, and then popped under the broiled until the breadcrumbs just start to brown. You can sprinkle them with a bit of granulated garlic and/or paprika for more taste. Shrimps are great this way too! Blessings, Ron

Have you tried that pre-cooked bacon? I bet it would work well with this.

I'll bet it would too. I got the center cut, because it's so lean, and 3 pieces have 2 WW points. They fit perfectly around a scallop. The pre-cooked would sure be easy.

This sounds so good. I think I'm going to try it with the soy bacon too. Hopefully it won't fall apart when I try to wrap it around the scallops. Thanks for posting this Nancy!
