Repost of the chicken/bean stew
So easy, and it's really good!
In the morning, in a low crockpot:
4-5 frozen chicken breasts
1 can drained corn (I used 1/2 bag of frozen)
1 can black beans, drained
1 med. size jar of Pace Salsa (or your favorite)
Cook on low for 6 hours. Turn off and add 8 oz. of light or non-fat cream cheese. Let melt. Stir together before serving.
I broke up the chicken once it started falling apart into bite size pieces. I had mine just in a bowl, but I warmed some tortillas for the boys.

B: nothing because I was in charge of a professional development today and I was so nervous I just couldn't eat and my principal brought in a ton of breakfast foods.

L: 4 small meatballs
D: 1 cup of Bridget's chili-corn-dog casserole. I needed something comforting and it really hit the spot.
