A nice hot soup. I really can't post a recipe because I just start with a broth base and add everything that looks like a vegetable. If I am making a beef soup, I braise all the meat first to make the broth. With a chicken soup I boil the chicken with onions, garlic, salt and pepper and use that broth. If I just have left over chicken, I "cheat" and use a commerical broth. It all works. Add a nice loaf of grainy whole wheat bread and YUM! Comfort food!
Well now .. I did make this yesterday it was in the 30s and the wind was blowing and drizzling rain we had ice warnings out but thank goodenss we did't get any but we sure got close to it ..` This is kind of a damp cold day comfort meal ..Hubby likes these kind of meat & potatoes meals he is a Southern Boy ..although my tastes run a little more ethnic mainly-Italian and Greek LOL ~~ Drop Meatball Soup~~~~ 4 potatoes peeled and cubed 2 or 3 carrots peeled and cut up cover with water add 2 beef bouillion cubes and boil till almost tender add 1 can (15z) diced tomatoes 1 can beef gravy and 1 can tomato soup to the pot ~~~ Meatballs: 1 1/2 lb hamburger, 1 beaten egg, 2 or 3 Tbls skim milk 1/2 chopped onion or some onion powder (1/2t) salt & pepper,1 to 1+1/2 cups stove top chicken stuffing or seasoned stuffing of your choice .. crushed ~~ mix all together& shape in to meatballs and drop into pot of slow boiling soup ..add 1 cup of frozen mixed vegatbels or 1 can drained corn continue cooking on low to medium until meatballs are tender about 30-40 min .stir occasionally to keep from sticking and add water as needed .. Hubby likes this with a pan of cornbread but I made some hot rolls instead which he ate all of them .... Time to put Hubby on a diet!! Gosh he was so skinny when I met him, if he turned sideways he was invisible! You should see him now~ Our picture right before we got married is on my profile. I smile everytime I see it ! We were so young ...... and dumb ~~~Can actually see the stars in our eyes ~
Kim. I'msure it's loaded with nutrition, has lots of veggies in it.. there is nothing fried or battered ,,and it has no sugar in it LOL But, I'm not sure of the calories I feel we need to have something more than just a piecec of baked chicken and lettucesalad or spinach every now and then . A good hot meal bubbling on the stove during thsese dark cold days can do wonders for us But, I don't think we will los seany weight if we eat the while pot!!! RX>. After eating a nice bowl of meatball soup get on the treadmill or go for a walk or get to the gym .jump up and down to dislodge these meatballs It's worth it ~~....it will not stick to your ribs ... and ...don't eat the cornbread .....sigh!!
I agree with Kim, Arianna, that sound so good! one thing we love, is your best stew, with dumplings on top, but that sure isn't band friendly! I love the dumplings more than the stew! ha I swear this winter, is the pits! -5 here, and wind chill, like, -19! Hope your sun is out today! Loved the pics on your profile! The GOOD old days!
